Work in batches, don’t try to rush the task by overcrowd the skillet – this just ends up steaming the meat with an excess of released juices in the pan. Ingredients
  • 3 lbs. top sirloin steak
  • 1 tablespoon ground pepper
  • 2 teaspoons salt
  • 2 tablespoons olive oil divided
  • 3 tablespoons minced garlic
  • 1 medium white or yellow onion
  • 1 tablespoon Italian Seasoning or 2 Tbs. if using the freeze-dried herbs I mentioned
  • 2 cups beef bone broth or, regular beef stock
  • 1 bay leaf
  • 3 tablespoons arrowroot powder or cornstarch (if not Paleo)
  • 6 tablespoons water
  • salt and pepper to taste
Instructions
  1. Cut sirloin steak in large, bite-sized pieces. Put cubes in bowl and toss with pepper, salt and garlic.
  2. Heat large skillet over high heat, 1 tablespoon of the oil. Working in two batches, sear the beef taking care not to crowd the skillet. Use the remaining oil for second batch. Do not cook the beef all the way through, just aiming to sear the exterior to create a caramelized crust.
  3. Transfer seared beef into slow-cooker (using liner, if desired). Chop up onion and add to slow cooker.
  4. Add Italian seasoning and broth, stir everything to combine. Top with bay leaf.
  5. Set slow cooker timer on low for 8 hours. Add lid.

  6. In last hour of cooking, mix together the slurry of arrowroot powder (or cornstarch) and water. Stir into slow cooker and let continue to cook. This will thicken up the cooking juices to make gravy.

  7. After thickening, season with salt and pepper to taste.
