I’m about to flip my gourd (in a good way), October 1st is National Pumpkin Spice Day.. I know pumpkin spice has been super trendy ever since a certain coffee shop got a hold of it, but I’ve been a pumpkin “Spice Girl’ back since 5rd grade when I brought home a pumpkin spice muffin recipe to replicate that my class made for a Thanksgiving feast (that was 40 years ago, y’all).
I’m sharing that pumpkin muffin recipe again in this post, along with some other pumpkin goodness I’ve updated to include Collagen Hydrolysate (or another protein powder of choice). I’m such a stickler for getting enough protein throughout the day! The new recipe (a little further in the post post) is a Sugar-Free Pumpkin Spice Latte Mix with Collagen Mix.

You will love the ease and convenience of this coffee drink mix recipe — it makes it simple to have a PSL (pumpkin spiced latte) wherever you are! I often portion out the 1/4 cup of dry mix serving into a zip-top bag to take with me when travelling or post-workout.
Indulge your pumpkin spice cravings in a healthy way with this homemade coffee drink mix that features a boost of protein from collagen hydrolysate.
- 1 cup powdered dry milk of choice cow, coconut, soy, etc.
- ½ cup Collagen Hydrolysate
- 4 single-serve packages of instant micro-ground coffee (about 4 ounces)
- ¼ cup allulose or stevia-based sugar substitute cup to cup equivalent
- 1 tablespoon pumpkin pie spice

Add all ingredients to mason jar or zip-top bag, shake until combined. To prepare, add ¼ cup of dry mix to 8 to 10 ounces of very hot water and stir until combined.
Here are some other (mostly sugar free) ideas that will make your pumpkin spice life very nice, all while adding a little extra protein to the day!
Pumped Up Pumpkin Muffins: This is the OG of my pumpkin spice squad, the one that started back in 5th grade. Of course, I’ve lighted it up, swapped in some healthier ingredients (that weren’t readily available to use in the 1970s haha) and added protein powder. Please forgive the photography, this is one of the first recipes ever posted on my blog 5+ years ago.
Lightened Pumpkin Spice Crumb Cake (with Gluten Free Option): I am not a cinnamon roll eater, donut muncher, or really crave that many sweet baked goods for breakfast or dessert . . . however I’m a total sucker for crumb cake. Sigh, the little nuggets of sweet, buttery, crunch yumminess on top of a moist snack cake get me every time. I think you’ll like my lightened version of this popular cake – and I’ve added an update that shows you how to add a little more protein into it with Collagen Hydrolysate or another protein powder of your choice.
Paleo Pumpkin Spice Cookie Cake with Nut Butter Drizzle: It’s part cake, part giant cookie – and all good for you, in moderation of course. This is a A low carb, sugar free, gluten free, paleo, keto and diabetic friendly treat and I’ve updated it to include an option for adding with Collagen Hydrolysate or another protein powder of your choice.
Pumpkin Vanilla Chai Protein Oats: This is a big batch recipe you can make in a rice or multi-cooker and then portion out into single serve containers and freeze for PSL goodness year-round.

Unfortunately when you drink collagen it gets broken down and doesn’t reach the skin as actual collagen. So I don’t believe in spending money on this kind of supplement, BUT I do love pumpkin spice Lattes!
Honestly, skin/hair/nails is not a reason I use collagen . . more for joint support and muscle management. What is your opinion on this?
