So, you guessed it – I made this healthy fruit breakfast recipe with Nature’s Path Gluten Free Granola for some wholesome crunch with no worries of those little gluten buggars ruining my day. Eating a “crisp” or “crumble” might sound a bit unusual or induldgent for breakfast – but it shouldn’t. Chia Berry Breakfast Crisp with Stevia-Sweetened Greek Yogurt Recipe

  1. Heat oven to 375°F. In an ungreased 1 quart baking dish, mix frozen berries, chia seeds and 1 ½ teaspoons of the stevia together until fruit is coated.
  2. Sprinkle top of fruit with granola and lightly pat down.
  3. Bake approximately 20 minutes or until top light golden brown and fruit bubbling.
  4. Meanwhile, prepare yogurt by stirring together yogurt, vanilla extract and remaining 1 ½ teaspoons of stevia. Store in refrigerator until serving.
  5. Remove crisp from oven and let stand 5 to 10 minutes before serving. Serve warm with 1/2 cup of Greek yogurt mixture per serving. Serves 4.Chia Berry Breafast Crisp - Guten Free - TheFitFork.com

Seriously, all you do is wash the fruit, quarter the orange (leave skin on!) and peel the ginger, throw all the healthy ingredients along with a touch of Stevia (or you could use honey) into the food processor and pulse for about a minute. Viola, you’re done – it’ tastes even better the next day and can be used as a side salad, relish for lean proteins, topping for yogurt, or as a way to add some seasonal razzamatazz to your turkey sandwich or roast beef wrap. And, for those of you with dietary concerns, this fruit recipe is sugar-free, gluten-free, dairy-free and appropriate for Paleo, vegetarian, vegan and raw diets.

Raw Cranberry Orange Ginger Relish Recipe

  • 1 lb. package fresh cranberries
  • 1 large navel orange
  • 2-inch chunk of ginger root, peeled
  • 2 teaspoons powdered Stevia
  1. Rinse cranberries and drain in colendar.
  2. Wash and quarter orange, remove any seeds but leave peel on.
  3. Peel ginger with paring knife and cut into chunks.
  4. Place all ingredients in work bowl of processor and pulse intermittently for one minute, or until coarsely chopped.
  5. Serves 6 – 8.

Caramel Crunch Apple Nachos & The Running Revolution

Looking for a delicious dessert that celebrates some of the fall season’s favorite flavors without making your clean-eating conscience scream in horror?  My recipe for Caramel Crunch Apple Nachos is an easy-to-make, fun-to-eat sweet treat that is perfect for a Halloween party, harvest hoedown or any autumn-themed entertaining. I’m planning on making this no-cook recipe again soon as a sensible snack for movie night – since it’s October, I’m planning a classic horror movie marathon with my three teenage boys.  With so many apple choices at the market this time of year, this recipe is the perfect time to try that new variety – use just one type of apple or as many kinds of apples as you like in this fruit recipe.

Caramel Crunch Apple Nachos Recipe

  • 4 large apples, any variety (about 2 pounds)
  • 8 oz. light caramel dip from produce section (I used Litehouse brand)
  • 1 cup favorite granola (with or without nuts)
  • ¼ cup mini chocolate chips

 Directions

1. Cut apples crosswise into ¼” slices. Remove seeds and core from center with paring knife.

2. In microwave safe bowl, heat caramel until warmed and easier to drizzle, about 30 – 45 seconds from room temperature.

3. Layer half of apples on a plate and drizzle with 4 oz. of caramel dip. Sprinkle on ½ cup granola and 2 tablespoons chocolate chips.

4. Layer remaining apple slices on top of caramel-granola-chocolate mixture and then add on remaining toppings.

Great Grapes! An Awesome Fall Fruit for Running & Recipes

We all know grapes taste great and are a healthy snack; it only makes sense that they can be the perfect little pick-me-up in a running nutrition plan. While there is a growing contingent of people trying to avoid carbohydrates all together, foods that provide both simple and complex carbs are needed to optimize athletic performance and recovery. Most (but not all) carbs in your diet should be “complex” to provide a steady state of energy. Basically, because of the starchy cell structure in complex carbs (like whole grains and potatoes), your body takes longer to break them down and, therefore, sends the glucose through your bloodstream at a slower pace – less chance of a  sugar high and subsequent crash. But sometimes you need a quick source of energy, especially if you’re a runner, athlete or need some quick brain power – this is where the simple carbohydrates come in. Simple carbohydrates can be refined (like table sugars, candy, syrups and processed foods) or natural – always go for the natural because you also get the added benefit of vitamins, minerals and other nutrients found in the food!

 

Grapes are all-natural, simple carbohydrates that are easy for runners to consume for quick energy. Eat a handful before you go out for a run or recover from your workout with a smoothie made with grapes and a little protein powder. One thing I love about using grapes in my running diet is that they can be frozen and packed in a zip-top bag for a mid-workout snack on long run days or marathon races – so much healthier that a refined sugar goo!  And, when you consider that grapes are about 80 percent water, they’re a good food source for hydration. How very thoughtful of Mother Nature to have individually “wrapped” each grape for less mess – you couldn’t take slices of banana along like this!

There is a “bunch” of health research that athletes will appreciate knowing about grapes. For example, a study published in Molecular Nutrition and Food Research found that compounds in red grapes (and blueberries) may boost the immune system when combined with vitamin D. Also, according to the California Table Grape Commission, all grapes (whether green, red, purple or black) are an abundant source of antioxidants and other polyphenols that can help neutralize harmful free radicals responsible for cell inflammation but also helps lessen the chance of being afflicted with one of many harmful health conditions including cardiovascular disease, diabetes and some cancers.

I also love to use grapes as an ingredient in my recipes – that is if I can keep them away from my kids who have been known to devour five pounds in a single day. I recently developed this fall fruit salad recipe for the Litehouse Food’s Living Litehouse BlogGrape Walnut & Blue Cheese Salad Recipe! Oh, the combination of sweet grapes with the pungent cheese and crunchy nuts is divine!

Grape Walnut & Blue Cheese Salad Recipe

  • 2 lbs grapes (any variety or assorted)
  • 6 oz. crumbled blue cheese
  • 1 cup raw walnut halves
  • 2 tbsp olive oil
  • 2 tablespoon red wine vinegar

Wash grapes and pat dry. Add to bowl, sprinkle with blue cheese crumbles and walnut halves. Drizzle on olive and and vinegar; toss. May be made ahead and kept in the refrigerator.  Serves 8. 

grilled citrus chicken and grapesAnother favorite way to creatively use grapes is to skewer them up like little tomatoes when grilling, like I did in the recipe from the summer – Lemon Lime Chicken with Grilled Grapes Recipe! If it’s already too chilly to grill outdoors, you can still grill grapes (which are at their peak in the fall season) inside on an indoor grill or stove top grill pan.

Purple Cow Protein Smoothie: Blend together 6 ounces Concord grape juice, 6 ounces Vanilla Core Power (or milk of your choice) and 3/4 cup frozen grapes. Top with whipped cream and acai berry powder, if desired. Serves 1.

Blueberry Snap Pea Salad & Blueberries for Dessert

You can’t beat a big salad for a beautiful, easy-breezy summer meal — and one topped with blueberries and sugar snap peas adds just the right sprinkling of sweetness along with a saturation of whole body wholesomeness.  My Mixed Greens Salad with Chicken, Blueberries & Snap Peas was inspired by the recipe for Creamy Blueberry Chicken Salad in the August 214 edition of Cooking Light magazine. Of course, I had to do my own spin based on the fresh ingredients in my fridge!

So, what’s so special about these salad toppings? Well, grilled chicken breast offers a great source of lean protein, I always try to get about 25 – 30 grams of protein per meal. Blueberries are loaded with a wide rand of antioxidants that help me stay healthy on the inside and out and, as with most berries, are relatively low on the glycemic scale compared to many fruits. If I’m not careful, I can eat the whole pint – I guess there are worse things that could happen. Now, sugar snap peas are a childhood favorite, my mom used to grown them in the garden. So crisp, refreshing and surprising low in calories (only 26 calories per cup!),  sugar snap pea are a great source of fiber, vitamin C and vitamin A.

Mixed Greens Salad with Chicken, Blueberries & Snap Peas Recipe

  • 6 ounces baby spring lettuce mix
  • 1/2 cup thinly vertically sliced red onion
  • 1 cup sugar snap peas, halved lengthwise
  • 1/4 cup torn fresh basil
  • 12 ounces shredded skinless, boneless poached or grilled chicken breast
  • 2 cups fresh blueberries
  • ½ cup favorite balsamic vinaigrette or Litehouse Food’s Huckleberry Vinaigrette

 To prepare, divide lettuce evenly among four plates. Top each plate with equal portion of onion, snap peas, basil, chicken breast and blueberries. Drizzle with salad dressing. Serves 4.
