Even though I try to eat with my health in mind, I don’t always say “no” to sweets – but I do try to clean them up a bit. For example, instead of a bowl full of cold, creamy ice cream topped with crumbled cookies, I eat plain Greek yogurt that I’ve sweetened with stevia and topped with a crunch protein-based chocolate cereal (Power Os from Love Grown Foods). I also top that with mini-chocolate chips, it’s my go-to bedtime snack – it’s still sweet, but more balanced with protein to boost my workout recovery and make muscles while I sleep!

I also like to implement my “protein-hacks” in my kid’s lunchbox desserts as well. A study has shown that children ages two to 18 years old get 40 percent of their daily calories from junk foods like sugary sodas and fruit drinks, cookies, donut, candy, fried foods and more – that’s unconscionable. Kids of all ages want sweets, I get it – believe me I GET IT! I would try and trade the raisins my health-nut mom would pack in my lunch for a friend’s Hostess Cupcake – she never would trade, but started bringing me an extra cupcake on the sly.

So, as a parent myself now for more than 18 years, I’ve allowed my kids to eat sweets so that they don’t feel deprived but talked about limits and the effects of eating too much “less than quality food” – but that a small amount also be fine occasionally in the context of an overall healthy lifestyle. I also like to make our cookies and cakes at home, so I know exactly what is going into the recipe and into our bodies – choosing more nutritious alternatives when possible. Like heart healthy fats, sugar swaps, no chemicals or preservatives, organic when possible – you get the drift.

Caramel Banana Cereal Bar Today I’m sharing a healthier version of classic crispy yet chewy cereal bars. They are perfect for lunch boxes, backpacks, after school snacks, picnics, and pot lucks and bake sales! I used less butter and marshmallows than the traditional “crispie” recipe and supplemented with a reduced-sugar caramel and dried fruit for sweetness. For long-lasting energy, I threw in some nuts and a bean-based cereal for extra protein. Enjoy!

Caramel Banana Protein Cereal Bars

Ingredients
  • 3/4 cup banana chips or freeze-dried bananas
  • 3 ounces raw walnuts
  • 4 cups unsweetened, protein-fortified flake or “Os” cereal I used Love Grown Food's Mighty Flakes
  • 4 cups unsweetened Chex type cereal
  • 2 tablespoons butter
  • 6 ounces mini marshmallows
  • 2/3 cup low fat caramal dip I used Litehouse Foods brand
Instructions
  1. Add banana chips and walnuts to medium bowl and lightly break up into coarse chunks with mallet or back of spoon.
  2. Add cereals to bowl with banana walnut mixture; toss to combine. Set aside. In large microwave-safe bowl, add marshmallows, caramel dip and butter. Microwave on 50% power for one minute, stir until creamy. Return to microwave and cook at 50% power for additional 1 minute; stir until creamy. If marshmallows aren’t completely incorporated, continue and stir in 20 second blasts.
  3. Add dry cereal mixture to caramel mixture and stir with spatula until everything well coated.
  4. Line 8” x 8” baking pan with wax paper or spray with oil.
  5. Press mixture down firmly into pan. Let cool for 5 minutes and then cut into 9 bars, or size of your preference.

The second important thing I’ve learned is that no matter the age, boys are just messy – and this includes my husband to a degree. I’ve always kept my boys ready for fall season sports by taking them to the gym during the summer.

School is starting in a few weeks and, in addition to academics, my family with three teen boys is gearing up for a jam-packed fall season of sports. For the last several years, my husband and I have been switching gym memberships in the summer to one that will allow children over 10 to come in and workout alongside their parents.  This has offered us a chance to keep everyone in decent shape during the hot, hot summers here where, out of necessity, spend too much time indoors in the air-conditioning reading and playing video games.

Remember to have children hydrate properly for sports played in hot weather.It’s not a good idea to let your child go from reduced activity in the summer to hard-core training in the late summer sun once school starts. While bodies do benefit from a little extra rest in the off-season, athletes who ignore working out in the summer will not only be huffing and puffing during sprints but are putting their bodies at risk for muscles strains, tendonitis and heat exhaustion or worse.  Experts say that most sports injuries that happen in the early weeks of a sports season are from a lack of pre-season training.

Here are some Pre Season Sports Tips I’ve put together to make sure that your student athlete (middle school, high school and college) is taking measures to have a safe and successful season.

In addition to pre-season training, it’s also important to ensure your student athlete has been given a clean bill of health before stepping onto the playing field  — in fact, most school-sponsored teams and league sports required that parents bring in signed paperwork as proof that their child has had a recent physical. Even if your child’s sports organization doesn’t require a check-up, it’s still a good idea to be seen by a medical professional before the season start to review immunization records, discuss any health and safety concerns, and be proactive about any unexpected problems.

It’s the most wonderful time of the year – it’s a season for eating and greeting and spreading good cheer! I have to admit though, the thought of hosting breakfast or brunch sometimes intimidates me – especially knowing I’m not a graceful waker-upper. So, I like to have many of the menu items prepped ahead of time so I’m not running around like an overworked, grouchy elf in the morning. Make-ahead egg casseroles are ideal as are muffins and quick breads that can be baked a day or two earlier. Even pancakes can be cooked and kept in the freezer for a no-stress holiday breakfast celebration. I have an entertaining little activity that will slow down these busy bodies for a just a few minutes and also provide the opportunity to pump them with a wholesome glass of milk (soy, almond or whatever!).  These Snowman Milk Bottles are adorable and a super easy craft that most any youngster can make with minimal supervision – however, I suggest pre-cutting the felt and assisting with the glue gun lest there be no emergency room trips on a holiday. Snowman Milk Bottle Christmas Craft - TheFitFork.com

Supplies needed for each Snow Man Milk Bottle:

  • Empty mini milk bottle (available at craft store or recycled Starbucks Frappuccino bottle)
  • 1 ½ inch x 8 inch piece of colorful felt
  • 3 black buttons
  • Glue gun or glue dots
  • Scissors
  • Striped paper straw

For the scarf, use scissors to snip ½” long fringe into each end of the felt. Wrap around neck of bottle and knot to one side; secure with glue or glue dot if needed. Glue three buttons down front of bottle.  Fill with milk and add colorful paper straw.
