When I get my hands on a meat and cheese board, I’m always grabbing at the bits of aged beef, artisan cheeses, crispy crackers and assortment of “sidekick” fruits and nuts – all these ingredients inspired my Charcuterie Crunch Beef Trail Mix. I’ve used beef jerky and longer beef jerky sticks snipped into bits, broken up frico (something like these Just The Cheese Minis that are so popular on low-carb diets right now), crackers like cheddar goldfish and mini cheese cracker sandwiches, and roasted pecans, cashew, dried cherries and golden raisins. The beef jerky trail mix recipe as written below has 170 calories per serving, less than 9 grams fat, 16g carbohydrate and 6 grams protein.

DIY Snack Mix Bar - make your own trail mix!

To cater to individual tastes and dietary needs, you can also set up a DIY Trail Mix Bar with bowls of the individual ingredients are set out (I recently did a post for Beef Loving Texans about this game day snack idea). The guests can grab cellophane bags or smaller jars and let friends and family scoop up the various tasty morsels in any combination they see fit – there is no right or wrong way to do it! And, no more greedy fingers “cherry picking” favorite items from a pre-made beef trail mix medley and skipping around the rest. Each person creates their own unique trail mix masterpiece in a single-serve portion – that’s sensible, special-order and down-right sanitary.
