Whether you are lounging around on a Saturday or rushing out the door to start the work week grind, enjoying warm, yummy muffin is one of life’s little pleasures. However, for me anyway, most of the sugary-sweet muffins leave me in a crash-and-burn energy state about two hours later. My lower-carb and gluten-free Maple Ham & White Cheddar Cornbread Muffins are paired up almond flour with cornmeal for a hearty texture, and also include sugar-free maple flavor syrup along with aged white cheddar and bits of lean ham for insane flavor and a more protein than would be found in a traditional muffin. For example, each of these ham & cheddar muffins has 191 calories and 8g protein as opposed to a similar-sized blueberry muffin with 370 calories and just 5g protein. Did I mention how easy they are to make and that they also freeze well for meal prep? Yes, and yes! Mix this low-carb cornbread and ham recipe up in about 10 minutes and bake for 20 minutes. You can keep in the fridge for about 5 days, or stick the savory ham muffins in the freezer and then defrost in the microwave before devouring. As I mentioned, I used chopped up country ham from Clifty Farms, a family-owned operation that sells a variety of country of meats including ham, bacon, turkey and more. For convenience, I used the Clifty Farm Country Ham Biscuit Cut Slices from Clifty Farms, theses smaller, sliced portions cook up in a skillet in just a few minutes with virtually no mess. From there it was easy to chop them up into little tiny bits for the muffins.
You can find their products at a number of retailers in the southeastern U.S., or order directly from the website.
