Blue Cheese & Walnut Stuffed Strawberries

Ingredients
  • 12 large strawberries (approx. ½ lb)
  • 2 ounces whipped cream cheese
  • 1/4 cup blue cheese crumbles
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
Instructions
  1. Slice strawberries in half lengthwise, leaving some of the green top on each half.
  2. With the back of a spoon, scoop out a very small amount of the inner flesh if the berry doesn’t naturally have a significant hollowed center.
  3. In small bowl, mix together cream cheese, blue cheese and walnuts with a small spatula until well combined.
  4. Place about a 1 teaspoon dollop of cheese mixture in the center of each berry half, slightly pressing down to “set” in place.
  5. Drizzle strawberries with honey and sprinkle on a bit more blue cheese, if desired.

Simply pour a layer of milk on top of your avocado slices or guacamole and then chill (literally and figuratively)! When ready to get your guac on, simply drain of the milk and stir or mash. Or, you can also set an avocado half cut-side down on a big slice of onion and keep airtight in plastic wrap! These methods will keep your avocado looking pretty good for a day, maybe a little longer.

5) How to Ripen an Avocado in 10 Minutes: Turn a rock hard avocado into creamy, edible goodness by slicing and tossing with lemon juice and baking at 300 F degrees for 10 minutes or until just softening.

6) How to Ripen an Avocado Overnight: If you don’t need to eat your avocado ASAP, then stick it in a brown paper bag with a banana or apple and leave on the countertop. Overnight, the fruit’s ethylene gases will soften your avocado to perfection.

How to Lessen Seasonal Allergies for a Sneeze-free Trail Run

Even though I’m smiling, my seasonal allergies were in overdrive at my first trail race of the spring season. Really, it’s quite ironic. After persevering through the fickle winter weather in Texas, rescheduling and rerouting many runs while wishing for green trees and wildflower-lined trails to return, all I wanted to do during this trail run was run inside on a treadmill. Comfort for my watering eyes and sneezing was trumping the beauty of nature.  My eyes were watering so bad, I was having trouble seeing the nooks, crannies and tree roots on the trail – that’s dangerous!  

If you don’t know what seasonal allergies are, lucky you – you must not be suffering. Or, you’re sneezing, coughing and rubbing itchy eyes, but blaming it all on the common cold. However, a common cold should only last 3 – 14 days, while seasonal allergies go on as long as there is contact with the offending substance, typically February through September. Find out more on colds vs. allergies here. Ugh. So, what are these offending substances that torture us so? Well, seasonal allergies are caused by airborne proteins, molds and fungi that come from the onset of plant grow.

  • Itchy eyes and nose
  • More tears than normal
  • Post nasal drip
  • Runny nose
  • Scratchy throat
  • Sneezing
  • Stuffy nose

How to Lessen Seasonal Allergies for a Sneeze Free Trail Run

If you want to get outside and enjoy a trail run or walk through the park, there just seems no way to avoid these nasty little allergy creators that float around in the air – but there are some ways to lessen your reaction to them and make exercise more pleasant. Here are some things to consider:

Is it a bad day? Check the pollen and mold counts before you plan your run, or decided to skip. You can get this info from the local weather forecast or go to a website like the National Allergy Bureau and type in your zip code.  You may want to take your runs indoors on the days with super-high counts.

Is it a bad hour? Consider running later in the day when pollen counts are lower and molds have had a chance to dry up a bit. Also, a nice rain tends to wash away allergens temporarily – so, running in a light rain or after a gully washer is always optimal.

What about OTC medication?  Sometimes, there is no leeway to “plan” a run – especially if it’s at a race (typically at the highest-count time of day) or you have a busy work and family schedule.  Over-the-counter medications are a viable option when used according to direction. However, traditional antihistamine products like Benadryl can leave you feeling dried out and sleepy – groggy and dehydrated is no way to start a run! An article at Runner’s World says that the second generation of over-the-counter antihistamines such as Claritin, Allegra, and Zyrtec are better for runners because they are non-sedating and non-drying. You can be assured, I’ve stockpiled for the season at my neighborhood CVS Pharmacy.

Is it time to visit a medical professional? If seasonal allergies are really interfering with quality of life, stop suffering. Head over to MinuteClinic (found inside your neighborhood CVS) and get checked out. You don’t need an appointment, and on-site nurse practitioners and physicians assistants are ready to recommend the right over-the-counter medications and write prescriptions when medically appropriate.

Are you cleaning up post-run?  Remember that trail running and being outdoors this time of year leaves everything on you exposed to allergens – your shoes, your clothes, your hair and skin. That’s why you should leave your running shoes in the garage and head to the bathroom to remove clothing and take a post-run shower ASAP – otherwise the allergens will be nagging at you all day. You might even want to consider bringing wipees if you are driving to and from your running location. Also, it’s a good idea to wash your sheets at least once a week during peak count times to get rid of any lingering pollen, mold and such that you may have picked up just walking back outside to check the mail.

After learning some grill basics on how to operate gas and charcoal grills and prep beef before it hits the grates, participants put their skills to practical use firing up flat iron steaks to perfection – they were delicious!  A+ to everyone, especially genius, fast-learning student who cooked my steak to a magnificent medium-rare while I was off making the final salad preparations!

I’ll get back to the beef another day (oh, you know I will), but today wanted to share the dressing I made I made to accompany our steak lunch. Since I’m a huge fan of the Freedom Salad (with beef) at Freebird’s World Burrito that is drizzled with the yummiest ancho dressing ever, I knew I needed to replicate it for our post-class meal. Copy Cat Freebirds Ancho Salad Dressing

This vinaigrette is not too spicy and a tiny, tiny bit sweet -- it's perfect for salads, side dishes and marinades.
Cuisine: Mexican, Southwestern
Servings: 12 servings
Ingredients
  • 2 dried ancho chiles
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup rice vineager not flavored
  • 1/3 cup fresh lime juice
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon minced garlic
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon chile powder
Instructions
  1. Add dried ancho chiles to bowl of water, weight down with a plate so they don’t float to the top. Soak 4 hours or overnight.
  2. Drain water off rehydrated ancho chiles. Discard stems and cut open to remove seeds. Chop.
  3. Add chopped chiles, cilantro, lime juice, olive oil, garlic, honey, salt, pepper and chile powder to blender.
  4. Pulse blender on and off, blending ingredients until smooth and combined – about 1 to 2 minutes.
  5. Pour in 16-ounce Mason jar or salad dressing cruet and refrigerate until serving time.
  6. Makes 12 – 14 ounces.

2 Ingredient Ranch Pizza Dough whole pizza close up - litehouseDitch the delivery guy and make a delicious meal just about as fast as you can say “winner, winner, pizza dinner” 10 times.  Today, I’m sharing a pizza crust recipe that whips up in warp speed – just grab two simple ingredients and give yourself two minutes to create homemade dough that is ready to roll out and pile up with all those favorite toppings.  2 Minute 2 Ingredient Homemade Pizza Crust is an easy dinner solution that packs a little extra protein with Greek yogurt.

2 Ingredient Ranch Pizza Dough LitehouseI originally made this 2-ingredient, 2-topping Pizza Crust Recipe for Litehouse Foods using, their Homestyle Ranch. For Ranch Dressing devotees, the concept was capturing that signature buttermilk and herb flavor and baking it right into the crust – so no dipping, dunking or drizzling required! I must say, that crust was delicious! I’ve also swapped out the Ranch dressing with whole-fat Greek yogurt for a tangy, tasty twist that offers up a bit more protein – a consideration if you are making a veggie pizza.

While you only need 2 minutes to make the pizza crust, you’ll need another 12 minutes for it to bake in the oven, loaded with sauce, cheese, fresh veggies, meats and other toppings your crave. Still, you’re eating homemade pizza in less than 15 minutes and that is definitely faster than delivery! Homemade garlic pizza sauce tastes better, saves money and can be made ahead and frozen for a busy weeknight dinner solution.

You’ll also want to try my DIY Garlic Pizza Sauce, another 2 minute recipe (made in the blender) that will take your pie to a whole ‘nutha level.

2-Ingredient, 2-Minute Homemade Pizza Crust

Have a homemade pizza on your plate in less than 15 minutes thanks to this easy recipe for a 2 minute, 2 ingredient crust!
Course: Main Dish
Cuisine: American, Italian
Servings: 4 servings
Ingredients
  • 1 cup whole-fat (or 2%) Greek yogut
  • 1 cup self-rising flour
Instructions
  1. Heat oven to 475 F degrees. Place pizza stone or unrimmed baking sheet in oven to pre-heat.
  2. In medium bowl, add self-rising flour and Greek yogurt, stirring to combine. If mixture seems too sticky, add in more flour a tablespoon at a time.
  3. Plop dough out on liberally floured portable work surface, such as large cutting board or unrimmed baking sheet. Shape into one large ball for a 12” pizza or two smaller balls for personal-sized pizzas.
  4. Use a rolling pin to flatten dough to approximately 1/3” thickness, using fingers to mend any cracks or craggy spots on edges. Add toppings of choice onto uncooked pizza dough (like sauce, cheese, veggies, etc.). Open door of oven and use baking mitt to pull out hot baking sheet. Carefully slide prepped pizza onto hot baking sheet.
  5. Bake in center rack of oven for 12 minutes or until edges golden brown and cheese bubbling on top.
  6. Slice into wedges. Enjoy!
