Everyone needs a Christmas KISS . . . and by KISS, I mean “Keep It Simple Stupid” idea for holiday entertaining. When I have guests drop in unexpectedly or forgot to make something fabulous for a “bring a dish” event, I rely on guacamole. Everyone loves it and it is idiot proof.  Pomegranate Herb Guacamole Wreath is similar to a traditional guacamole, except it is bejeweled with sweet, juicy, deep red pomegranate arils and clusters of fresh herbs. This easy avocado appetizer and creative guacamole is a scrumptious showoff on any table of snacks and nibbles – it’s a delightfully sweet-savory addition to any holiday party menu. Pomegranate Herb Guacamole Wreath - is an easy avocado dip appetizer recipe that takes less than 10 minutes to make. Perfect for your holiday entertaining, or even just to dress up everyday tacos!

Prepare the guacamole “no-frills” with just ripened avocados, key lime juice (or can swap for half lemon and half lime juice), a bit of sea salt, and my favorite guac-hack of all time– Litehouse Guacamole Herb Blend. To turn this pomegranate avocado recipe into an edible holiday wreath, just serve in a round bowl and add clusters of pomegranate arils and herbs (I used rosemary) around the perimeter to look like berries and evergreen foliage. Do note, that if it’s no longer Christmas or any winter holiday, the pomegranate and chopped herbs can simple be mixed INTO the guacamole.

Deck the halls and your appetizer menu with this easy avocado recipe that is perfect for holiday entertaining.

Course: Appetizer, dip
Servings: 8 servings
Ingredients
  • ½ cup Key Lime juice
  • ½ teaspoon sea salt
  • ¼ jar Lighthouse Guacamole Blend
  • 2 large avocados peeled and seed removed
  • ¼ cup pomegranate arils
  • 1 bunch fresh herb of choice
Instructions
  1. In medium bowl, add lime juice, salt and guacamole herbs. Let sit for one minute.
  2. Add peeled, seeded avocados to herb mix and use tines of fork to mash up avocado to a mostly smooth consistency, leaving some small chunks. Ensure that herb and juice mixture has been evenly mixed into mashed avocado.
  3. Use a spatula to transfer guacamole to serving bowl.
  4. Place pomegranate arils in small, evenly-spaced clumps around perimeter of bowl. Alternatively, you can stir them all into guacamole if you don’t want the dip to look like a Christmas wreath.
  5. Snip herbs into smaller pieces and tuck into guacamole near pomegranate clusters to resemble leaves.
  6. Serve immediately with chips and/or dipping vegetables.
