Vitamin Shoppe Protein Pantry

Ya’ll know how I feel about getting enough protein and love to create and share protein recipes for breakfast, lunch, dinner and snacks. Adequate protein intake helps to build and repair muscle, supports weight management by satisfying appetite and boosting metabolism, lessens cravings and mindless snacking, can lower cholesterol and support heart health, and offers a wide range of vitamins and minerals for optimal health.

I've been known to get a little excited about PROTEIN!

I’ve been known to get a little excited about PROTEIN!

Research shows that it’s best to spread out protein consumption evenly throughout the day, aiming for about 25g to 30g per eating opportunity – including refueling with a protein-rich snack within 30 minutes of an intense workout or long run.

While most Americans get enough protein, they tend to overdo consumption at dinner and skimp on breakfast. But, breakfast is covered thanks to all of the convenient and easy-to-make products in Vitamin Shoppe’s Protein Pantry, like the FlapJacked Mighty Muffins that cook in 35 seconds in their own container. No excuses!

Apple Ring Protein PancakesSince apples are everywhere this time of year (and also good for you), I’ve created an easy Apple Ring Cinnamon Protein Pancake recipe using a packet of Mancake Cinnamon Oat Protein Pancake Mix (feel free to swap for the protein pancake batter you prefer).Apple Ring Protein Pancakes

This easy breakfast recipe offers a full serving of both protein and fruit – the protein will keep you satisfied and skipping right over a mid-morning sugar crash while the apple offers lots of fiber and is a healthy source of complex carbs to fuel your body and brain.

Chocolate Cheesecake Pancakes with Berry Burst Topping #MealtimeSolutions

Chocolate Cheesecake Pancakes - Horizon Products

June 2103 Jon and Davis LakehouseIn the morning, my three teen boys are as hungry bears coming out of hibernation. You don’t want to mess with them until they’ve gotten their paws on some food. I always try to offer a breakfast that will power them from early morning straight through to lunch. Pancakes are a favorite, and over the years I’ve found different ways to add a little more substance to these typically carb-laden morning meal.  For example, I’ve done protein powder in pancakes,Paleo pancakes and alternatives to sugary syrup.

Products from Horizon help me make yummy goodness for my children – I can rely on the taste and quality of the ingredients time and time again, which just takes more worry out of my day!  One meal solution I came up with for breakfast is an easy recipe for Chocolate Cheesecake Pancakes (with Creamy Berry Burst Topping).

Chocolate Cheesecake Pancakes - TheFitFork.com

horizon super sqeezeThis quick recipe uses a new Horizon product the whole family is loving these days – Super Squeeze Mixed Berry Burst. While these little squeeze packets are perfect for lunch boxes and gym bags, the also make a fabulous swap for syrup on pancakes and waffles. Made with wholesome ingredients like organic skim milk, organic berry puree and organic can sugar, each pouch provides 5 grams of protein and is a good source of calcium. The other cool thing about these single-serve packets is that you can just pop off the lid and squirt as much or as little as desired. Even little toddler hands can be in charge of this fun job!

Chocolate PAncakes with Cottage Cheese and Horizon Berry BurtsIn addition to the 5 grams of protein coming from the Super Squeeze, I’ve also pumped up the pancakes with protein from Horizon Low-Fat Cottage Cheese.  Cottage cheese is an excellent source of protein and calcium, and while many kids can’t stand the texture, I’ve run it through the blender to be super smooth and creamy. Blended with cocoa powder and a bit of stevia sweetener, it actually tastes like a decedant cheesecake!  I’ve used a traditional convenience pancake mix as my base, but if you are following a gluten-free diet, just swap in a gluten-free baking blend with a teaspoon of baking powder. Bite of Chocolate Cheesecake Pancake - TheFitFork.com

This breakfast recipe is a easy mealtime solution that uses low-fat cottage cheese in pancakes and milk-based berry burst packets from Horizon as a topping.
Course: Breakfast
Cuisine: American
Servings: 4 servings
Ingredients
  • 1 1/2 cups milk (2%, almond, coconut, etc)
  • 2/3 cup Low-Fat Cottage Cheese I used Horizon Organic
  • 1/4 cup cocoa powder
  • 1 teaspoon liquid stevia can substitute 2 tablespoons honey
  • 1 1/2 cup complete pancake mix type that only requires water to make
  • 1 box Horizon Super Squeeze Mixed Berry Burst 4 squeeze packs
  • 1 cup fresh berries raspberries, blackberries, sliced strawberries, etc.
Instructions
  1. Add milk, cottage cheese, cocoa powder and stevia into blender. Blend for approximately 30 seconds until ingredients are combined and smooth.
  2. Pulse in pancake batter until combined, taking care not to over blend. Heat skillet to medium, add approximately ¼ cup batter in center of skillet and cook for 2 – 3 minutes or until bubbles appear on top and edges have set. Use spatula to flip pancake over and cook for an additional minute or until cooked through. Repeat for remaining pancakes (makes approximately 16 pancakes).
  3. To serve, stack 4 pancakes on a plate and squeeze one packet of Horizon Super Squeeze Mixed Berry Burst on top. Top each stack with ¼ fresh berries.

12 Ideas for Hosting a Healthy Holiday Breakfast or Brunch

It’s the most wonderful time of the year – it’s a season for eating and greeting and spreading good cheer! If you are hosting a morning get-together over the holidays, it needn’t be fancy or fussy to be successful. In fact, some of the best memories I have are sitting around in my pajamas after the stockings have been unstuffed and ribbons unraveled to share a leisurely breakfast with family and reminisce about the glories of yore.  When I’m in town, I also like to don my most festive “ugly” sweater and invite the neighbors over for a holiday brunch.

I have to admit though, the thought of hosting breakfast or brunch sometimes intimidates me – especially knowing I’m not a graceful waker-upper. So, I like to have many of the menu items prepped ahead of time so I’m not running around like an overworked, grouchy elf in the morning. Make-ahead egg casseroles are ideal as are muffins and quick breads that can be baked a day or two earlier. Even pancakes can be cooked and kept in the freezer for a no-stress holiday breakfast celebration. Some of my favorite breakfast recipes are included in the Healthy Holiday Breakfast and Brunch collection I created for Foodie.com.

Snow Men Milk Bottles - Kid's Craft - TheFitFork.comIf your gathering is anything like mine, there will probably be at least a dozen kids racing around the Christmas tree high as flying reindeer jacked up on candy canes. I have an entertaining little activity that will slow down these busy bodies for a just a few minutes and also provide the opportunity to pump them with a wholesome glass of milk (soy, almond or whatever!).  These Snowman Milk Bottles are adorable and a super easy craft that most any youngster can make with minimal supervision – however, I suggest pre-cutting the felt and assisting with the glue gun lest there be no emergency room trips on a holiday. And, BTW, TheFitFork.com has not turned into a DIY Craft blog, but these were just too fun not to share!

Snowman Milk Bottle Christmas Craft - TheFitFork.com

Supplies needed for each Snow Man Milk Bottle:

  • Empty mini milk bottle (available at craft store or recycled Starbucks Frappuccino bottle)
  • 1 ½ inch x 8 inch piece of colorful felt
  • 3 black buttons
  • Glue gun or glue dots
  • Scissors
  • Striped paper straw

For the scarf, use scissors to snip ½” long fringe into each end of the felt. Wrap around neck of bottle and knot to one side; secure with glue or glue dot if needed. Glue three buttons down front of bottle.  Fill with milk and add colorful paper straw.

So, what do you like to serve on Christmas or holiday mornings?  Do you have a once-a-year special holiday recipe or do you stick with your standard-issue morning meal?

Apple Protein Pancakes with Sugar-Free Cider Syrup

Apple Protein Pancakes with Sugar Free Apple Cider Syrup - TheFitFork.comThe kids have the whole week off school for Thanksgiving and they want pancakes for breakfast  . . . every day! My recipe for Apple Protein Pancakes with Sugar-Free Cider Syrup wins for convenience and taste. It relies on boxed pancake mix (you can use whole wheat) and jarred applesauce.  I originally developed this recipe for Litehouse Foods (they have the best apple cider), but later tweaked it for my own use by using a couple scoops of vanilla protein powder.  I just find that after eating pancakes, I get the “hangries” unless I’ve balanced it with a little more protein.  Oh, and the syrup doesn’t have any added sugar, a huge bonus considering the way my kids pour it on without discretion.  If you’d rather do the no protein powder version, get the recipe here.

Sugar Free Apple Cider Syrup for Pancakes - thefitfork.com

Apple Protein Pancakes with Sugar-Free Cider Syrup

For Pancakes:

  • 2 cups “complete” pancake mix (the “just add water” type)
  • 2 scoops (about 2/3 cup) vanilla or unflavored protein powder
  • 1cup unsweetened applesauce
  • 1 cup apple cider

For Syrup:

  • 2 tablespoons cornstarch
  • 1 ¼ teaspoon liquid Stevia (or any sugar  substitute to achieve a ½ cup sugar equivalency) I used NuNaturals
  • 1 teaspoon cinnamon
  • 2 cups  apple cider
  • 2 tablespoons lemon juice
  • 3 tablespoons butter

1. Heat electric griddle to 375 F degrees or skillet over medium high.

2. In bowl, combine pancake mix and protein powder with a whisk until blended. Stir in applesauce and apple cider until slightly smooth. If batter is too thick, stir in a scant amount of water or more apple cider to thin.

3. Pour batter onto hot griddle using 1/3 cup measure. Cook for approximately 1 to 1 ½ minutes before flipping. Pancake is ready to flip when edges are pulling away and bubbles on top have slowed down.

4. Flip pancakes with spatula and cook for approximately 45 seconds to 1 minute longer. Repeat for remaining pancake batter.

5. Meanwhile, prepare syrup by mixing cornstarch, sugar substitute and cinnamon together in a saucepan with heat off.

6. Gradually whisk in the cider and lemon juice and cook over medium heat stirring frequently, for 4 to 5 minutes, or until thickened

7. Remove syrup from heat and stir in butter. Serve warm over pancakes and store leftovers in the refrigerator.

Serves 6 (2 pancakes each)
