Thai-Style Shrimp & Watermelon Rind Ceviche

This post is sponsored by The National Watermelon Board (Watermelon.org), however all comments, opinions, enthusiasm and content is my own.

I can’t even count how many watermelons have met their final fate at my house, at least dozens of dozens (meaning hundreds) if not more! Watermelon, after all, is my favorite fruit and I eat it every which way including whacked into a wedge and as a featured ingredient in smoothies and on salads, skewers, sandwiches and such.

7 Nourishing Soup Recipes for Dinner All Week

December may seem to be the month of BIG FANCY MEALS. Tenderloin, roast turkey, Cornish hens, or lobster tails might headline a celebratory holiday dinner, but there are still plenty of other meals to be made in the month. And, let’s be honest, with a to-do list and social schedule packed fuller than Santa’s sleigh, there isn’t much time left to make a balanced, nourishing meal to fuel up for the festivities. Or, you may even be trying to “eat light” between events that are loaded with delicious, yet indulgent, foods that aren’t typically in your diet.

Seven Nourishing Soups for Dinner All Week -- try one or all 7 of these healthy, nutrient packed soups that are simple to make and will satisfy your soul and body.

SOUP is the answer, soup to the rescue! Soup is the unsung hero of the season and gift to all us family meal makers out there – it’s typically super simple make, extra veggies can be snuck in without backlash, it’s forgiving and easy to swap out ingredients, it can be made ahead and then reheated as-needed, leftovers seem to even taste better as spices have more time to mingle. And, if you need a last-minute gift idea for your neighbor or that single guy in the office, why not whip of a batch of your favorite soup and pair with a loaf of artisan bread for an amazing, edible present.

I hope you enjoy at leat one of my seven super soup favorites!

Mezzetta Spicy Shrimp Spinach Soup

Almost Instant” Spicy Shrimp & Spinach Soup – So much better than a Styrofoam cup of salty, surprisingly high fat ramen noodles, this fresh and fit soup recipe is meal prepped with fresh veggies, cooked shrimp, brown rice and more and then stored in the fridge (for up to a few days). When ready to eat, simply add boiling hot water, shake and then spoon in up right from the jar.

Thai Carrot Crab Noodle Soup is a powerhouse of nutrition -- feel free to swap out the protein for chicken or shrimp , if needed.Thai Carrot Crab Soup – Oodles of noodle deliciousness and healthy veggie ingredients, including carrot juice and brown rice noodles keep it gluten-free.  Not feeling crabby? Feel free to swap out the crab with shrimp, chicken, tofu or whatever protein you have on hand.

Best Ever Chicken and Rice SoupComforting Chicken & Rice Soup – A feel good, taste good soup on days when you’re feeling run down and need soul and body satisfying nourishment.  A light roux makes the soup seem richer than it is, and shredded chicken, fresh veggies and brown rice create a balanced bowl of goodness.

Vegan Chipotle Sweet Potato SoupVegan Sweet Potato Soup with Cilantro Chimichurri – It’s easy to make a meal out of this meat-free, dairy-free, vegan soup – it’s as hearty as it is healthy. The velvety texture is spicy, smoky and a touch sweet and the vibrant green drizzle adds an unexpected (yet delicious) tang!

So many different ways to top this delicious, nutritious soup!

Smoky Chipotle Butternut Squash & Chickpea Soup – Frozen cubed butternut squash and rinsed canned chickpeas keep this pleasingly peppery soup convenient for a quick fix on weeknights. A bowl of this soup will fit a vegan or vegetarian diet, but I like to add cheese and bacon!

Cranberry Orange Bourbon Beef Stew – When does a soup stop become a soup and start becoming a stew? Perhaps it’s when you add succulent, meaty chunks of beef to a slow cooker like in my delicious stew-soup hybrid that is elevated with a hints of orange and tangy berries.

Lemony Carrot Ginger Gazpacho – Stop thinking of gazpacho as only a warm-weather soup. This twist on the Spanish classic is perfect cool lunch for post-workout when you don’t want a steamy bowl of soup in your face. Or, if you feel chilled to the bowl, just go ahead and heat up Gazpacho, there’s now law that you can’t. I’ve done it and it’s great!

Y’all know with my busy family, work and fitness training schedule, I’m a convenience lover – but keep in mind I stock up on HEALTHY helpers, not your typical sodium, sugar and fat-loaded convenience products.  Some of the convenience ingredients I’ve used in the soup recipe to reduce prep time include the Power Blend from Mann’s  Vegetables (a blend of Brussels sprouts, Napa cabbage, kohlrabi, broccoli, carrots and kale) and Odowalla 100% Carrot Juice. I also used Better that Bouillon Vegetable Base and  the Thai Brown Rice Pad Thai Noodles from Explore Asian (see my past recipes), as I find they taste super and the texture holds up really well!

Thai Coconut Shrimp with Finger Limes ( a freaky little fruit )

Finger Lime Coconut Shrimp Soup made in the style of Tom Kha Gai

What do you do with these weird little limes? They’re called Finger Limes and also “citrus caviar” because of the caviar-like bubbles of tangy citrus pulp on the inside. Exotic fruit afficianaos describe the favor as “tart, lemon-lime with slight herbaceous notes.”  These little-bitty limes hail from Australia’s coastal and rainforest areas – but are also now grown as a specialty product in California.Finger Lime - Citrus CaviarAn enthusiastic citrus-squeezer could make mini margaritas, but I’m saving that as treat to look forward to after my Spartan Beast Dallas race on October 31st (talk about a scary Halloween)!  Tonight I’m sharing a version of a favorite soup, Tom Kha Gai – you know, that spicy Thai soup with chicken and coconut milk. But, I’m doing huge shrimp and lots of limes – it’s a winner, winner for an easy and exotic dinner. You’re going to love this Thai Coconut Shrimp Soup with Finger Limes, especially now that the weather is cooler. If you don’t have finger limes, just swap in two limes sliced thinly and then into quarters. Also, I’ve used a LOT of Instantly Fresh herbs in here (so convenient and next best thing to fresh) — but feel free to swap in fresh chopped if you prefer.Thai Coconut Shrimp Soup with Finger Limes

by The Fit Fork at Foodie.com

Don’t get so busy at mealtime that you slip into the bland habit of eating the same thing every night. Occasionally this happens to me, I realize that I am eating the same lettuce mix with the same toppings and dressing for days on end – like some sort of salad robot!

Just like you plan a vacation by leafing through brochures and surfing the web, why not spend a few extra minutes each week finding some quick and easy ways to give your busy weeknight meals some international flair and flavor. To get you started, I’ve put together a collection simple and healthy dinner recipes for Foodie.com that are a one-way ticket to flavor town – groan, did I just say that?! There is a healthy international recipe for everyone – Thai recipes, Italian recipes, American recipes, Middle Eastern recipes, Latin American recipes and more! I’ve also put together a challenging workout for the gymnastic rings. I love to get a workout in on the rings because, unlike a stable bar or floor surface, the rings make your muscles work in over drive to find balance and work in harmony with your whole body. On the rings everything is a little more difficult –  okay, some things are a lot more difficult. With the movement of the rings,  I’m constantly having to rely on joint position and muscle senses in order to accomplish an exercise – that’s called proprioception, y’all! Gymnastics Ring Fiend Workout - TheFitFork.com While I’ve written this gymnastic ring workout for 5 sets, feel free to go at your own pace and rest between sets and individual exercises. Also, reduce the number of sets and reps, if needed. If you can’t do one of the exercises, simply hang from the rings and stretch your spine out and then practice the hollow body rock movement needed for kipping. If workout is too easy, wear a weight vest like I suggest in my Rings of Fire workout – ha! Swinging on the Rings - TheFitFork.com

zooma run texasAlso, if you are planning on running Zooma Texas (or even just sorta thinking about it), join me, the other Zooma ambassadors and lots of new running friends at Athleta at the Domain ( 11601 Century Oaks Terrace Suite 121, Austin, TX 78758 ) for a Kick Off Training Run.  We’ll run 3 miles together as #ZOOMAnation and then enjoy post-run beverages and a gift-with-purchase (of $75+) from Athleta. All levels of runners are welcome, you do not have to be registered for the race to attend, so grab your girlfriends and join us!

Have you ever been on the gymnastic rings? My favorite exercise on the rings is “toes-to-bar,” what is yours . . . or what would you try first? Have you ever run a Zooma race?
