June has arrived and that means all the watermelon all the time around here! It’s no secret that I love this ginormous fruit, and not just for the juicy, sweet, summery flavor – it also has many benefits for my super active lifestyle. I’m talking overall hydration, potassium to lessen cramps, natural sugars to fuel my pedal-to-metal push, l-citrulline to possibly reduce post-workout muscle soreness – plus lots of other essential vitamins, minerals and nutrients.Jennifer Fisher thefitfork Watermelon on the Go

I love watermelon so much, I can’t help but wax poetic over it! Literally. Read on to find my Dr. Seuss-y inspired ode, I Love Watermelon Everywhere, and to get some great watermelon ideas for summer fun.

I really did eat watermelon with a goat!

I know, I know – it’s kinda silly, I’m kinda silly, but watermelon is fun and smart. Smart, not just for the nutrition reasons I mentioned earlier, but also that it’s surprisingly easy to take on the go, can be eaten unadorned or in a zillion creative recipes, and literally EVERY part of fruit is edible – flesh, juice, rind and seeds! At my house we go through AT LEAST one big watermelon per week, sometimes I have to hide my portion from my hubby and boys who are just as big as watermelon lovers as me! The hubby is eating my last slice there and taunting me!

Friends are always asking for my very favorite watermelon recipe, but since watermelon makes everything delicious, it’s impossible to narrow it down to just one dish. So, here are some of my top contenders (and notice how they are all easy to pack and package up for a warm-weather picnic, trip to the lake  (above) or “summer escape” lunch trapped your desk).

  1. LOL I can definitely sense your love for watermelon! My kids are really into it this summer, they ate an entire HUGE melon in less than 12 hours! CRAZY!

    • Thanks Patrick! My love for watermelon and recipe collection is HUGE, but these are a few I go back to time and time again!

  5. We love watermelon too! In fact we’re going to cut one up today when my oldest daughter gets home from school. Such a cute little goat in the photo, I grew up with goats and love them.

  6. This is such a fun post! We go through watermelon like crazy in our household too. Whatever doesn’t get eaten right away gets blended into a delicious smoothie.

  7. I LOVE watermelon too! It’s the only fruit I really, truly crave. There is nothing better than cold watermelon after coming in from the heat.
