Small Batch Hummus to Serve One or Two

Buying a big tub of hummus can seem like such a commitment, especially if you’re snacking solo or with a just friend or two.  My Small Batch Hummus recipe is perfectly proportioned so that you can finish it off in two sittings (or one snack session if super hungry) – or share it with a buddy and have no leftovers clogging up the fridge!

Plus, when you make homemade hummus, you’re in total control of the ingredients – there’s no weird preservatives, additives, or yucky stuff.  Plus, you get all the benefits of chickpeas, they are abundant in dietary fiber and also a good source of plant protein, iron, folate and other essential nutrients.

It’s fast, it’s easy, there is no cooking – you start with a can of chickpeas. Of course, you can make your own chickpeas, but that adds a lot of time and hassle to what is an easy-peasy snack recipe for one or two.

Gently rub any remaining skins off your chickpeas for smoother hummus.

After draining the chickpeas (a legume sometimes referred to as garbanzo beans), pour them out onto a clean dishcloth or paper towels and lightly rub dry. In addition to drying the chickpeas, the other goal here is to remove any lingering skins. The light patting dry will encourage stragglers to fall off, simply pick the skins out and discard. The skins will do no harm if they end up in your hummus, it will just be not quite as smooth and creamy.  

Then, it’s just a matter of whipping everything up in a food processor or blender. Since this is a small batch appetizer recipe, a mini food processor or personal sized blender will work best.

How to Serve Small Batch Hummus

  • Simply paired with raw veggies like carrots, celery, radishes, squash rounds are my favorite way to eat hummus.
  • Serve with pita wedges for dipping, smear on crackers, or spread on slices of toasted baguette.
  • Elevate sandwiches, wraps and quesadillas by spreading around as part of the filling.
  • Get creative and toss with hot pasta or zoodles for an instant chickpea sauce.

Leftover Chickpeas in Can? While this homemade hummus for two uses just half a can of chickpeas, don’t throw the remainder out — you have options. First, you could easily double the homemade dip recipe, it scales up beautifully (however, do note the capacity of your mini food processor and use a bigger processor or blender, if needed). Make just enough homemade hummus to get your through a couple health snack sessions — or to share with a friend. Easy, healthy, and homemade, a fantastic snack and spread to add to your active lifestyle. Lots of dietary fiber and a good source of plant protein, dietary fiber, iron, folate and other important nutrients.

Ingredients
  • ž cup canned chickpeas drained and rinsed (about half a 15.5-ounce can)
  • 3 tbsp olive oil plus an additional 1 teaspoon for topping, if desired
  • 1½ tbsp tahini
  • 1 tbsp lemon juice
  • ½ tsp garlic or garlic paste
  • Âź teaspoon salt
  • Âź teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
Instructions
  1. Place all the ingredients in a personal-sized blender or mini food processor; process until smooth. If the consistency seems too pasty or thick, blend in 1 teaspoon of water at a time until desired texture is achieved.
  2. Transfer the hummus to serving bowl and drizzle with 1 teaspoon of olive oil and a sprinkle of paprika.

NOTE: Store the leftovers in an airtight container in fridge for up to 4 days.
VARY IT! Extra chickpeas from can be kept in an airtight container in fridge for a few days and added to salads, soups, and wraps

Air Fryer Crispy Chickpeas (for One)

Air Fryer Crispy Chickpeas make snack time a happy time and a healthy experience, especially when that craving for something salty-crunchy hits but are trying to stay away from chips.

If you’re like me, you’ll want to eat theses roasted chickpeas warm, right off the air-fryer and pop the lightly-seasoned, crispy delights into your mouth, one after one! Definitely one of my favorite single-serve snack ideas!

The good news is that unlike typical crunchy snack foods, you control the fats, the sodium, and the flavor. Nothing is processed or yucky, it’s just the goodness of garbanzo beans (the other common name for this legume) simply dressed up with a hint of flavor.  

This quick snack recipe for one makes a single serving (as hinted, lol) and uses ž cup of chickpeas (also called garbanzo), about half a can. To use up the other half of the can, check out this Small Batch Hummus recipe (or just easily double the ingredient list for the Air Fryer Crispy Chickpeas below).

PRO TIPS:

Remove skins from chickpeas to help oil & spices adhere.

Remove Skins:  Often canned chickpeas still loosely have their “skins” on. Most fall off during rinsing but any remaining can be removed by patting dry on a paper towel and loosely rubbing around until removed. You CAN eat chickpeas with the skins still hanging on, there is no harm! But removing helps the oil and spices cling onto the legume better in this recipe and for hummus recipes, it creates a smoother outcome.

Oven Option: If you don’t have an air fryer (I LOVE my Omni Pro Plus 18L), the general rule of thumb for crisping up garbanzo beans in the regular oven is to use the same temperature, but double the cooking time (shaking pan around every 10 minutes to promote even cooking).

Seasonings: Instead of smoked paprika, try curry powder, chili powder, Italian seasoning, Everything Bagel spice, or any other spice or blend you can dream up. Even homemade gingerbread spice with a pinch of stevia would make a delicious, unique chickpea snack.

How to Serve: Of course, eating warm off the pan is the obvious way to serve roasted chickpeas! They are also delightful tossed on a salad for extra nutrition and texture. Also try soups (instead of croutons) and as a garnish atop dips (like hummus) or your main entrĂŠe (like so yummy with salmon and greens)

How to Store: To maintain crunch, store roasted chickpeas covered at room temperature, for up to a couple days. If desired, pop back into a pre-heated 350F air fyer for 1 to 2 minutes to warm and re-crunch.

Crunchy, crispy and addictive! This fun and easy-to-make snack offers lots of dietary fiber and also is a good source of plant protein, iron, folate and other essential nutrients. Note: If you want to use up the entire can 15-ish ounce can of chickpeas, just double the recipe!

Ingredients
  • ž cup canned chickpeas about half a 15.5-ounce can
  • 2 tsp olive oil
  • 1/2 tsp lemon juice
  • 1/8 teaspoon salt
  • Âź teaspoon ground black pepper
  • ½ teaspoon smoked paprika
Instructions
  1. Pre-heat air fryer to 390 F degrees.
  2. Drain and rinse chickpeas.
  3. Pour out on paper towel and dry, gently rubbing to release any skins; discard skins.
  4. Add chickpeas to small bowl and drizzle on olive oil and lemon juice, stirring to coat evenly.
  5. Sprinkle with salt, pepper, and smoked paprika and stir around to adhere to chickpeas.
  6. Pour chickpeas out on rimmed baking sheet that fits in air fryer.
  7. Stick in preheated air fryer for about 15 minutes, stopping to shake around once halfway through. Chickpeas should be toasted and crunchy when finished. IF needed (because air fryer models vary in heating), cook for another 2 to 4 minutes.

  8. Remove and let cook a couple minutes before eating. Store leftovers in air-tight container at room temperature, for up to 3 days. If desired, you can warm up in air fryer preheated to 350 for 1 to 2 minutes.

  9. Note: For a conventional oven, cook at 390-400F degrees for 30 minutes, or until golden brown and crispy, stirring up every 10 minutes.

WINTER WATERMELON FIT TIPS

SPRING WATERMELON FIT TIPS

Spring Salads: Take advantage of watermelon benefits and toss chunks into your grain bowls and salads, heck – throw on an entire wedge! Adding watermelon is a great way to dress up boring salads with some unexpected color and sweetness. Check out a few of my favorite watermelon salad recipe I’ve come up with over the years:

Watermelon Holds for Fitness: This season, if you want to add a watermelon to your workout, try a static hold to complement your runs, walks or dynamic strength training sessions. Static holds are isometric exercises that hold the body in one position for a duration of time. This means your muscles don’t contract and change length as in dynamic exercises, but you still benefit from the “time under tension.”  Here are some static holds to try: most variations of planks, v-sit (boat pose), squat hold (or wall sits), overhead hold, front hold, and glute bridge hold.

How to Pick a Ripe Watermelon: Look for the “field spot” where the watermelon was resting while it grew. The more yellow, even almost yellow-orange, the riper – quite white means not ripe! Also, this takes a bit of intuition, but if the watermelon feels “heavy” for its size, this typically means it will be juicer and sweeter. Some also say rounder watermelons are sweeter than elongated watermelons, but I’m not so sure of that! I’ve had great watermelons of every shape. Also, you can look for “sugar webbing” (the coarse, brown web texture on some watermelons)/

SUMMER WATERMELON FIT TIPS

Watermelon Floats: Yes, watermelon floats! This makes the fruit a fun item not just to eat in the summer but to play pool games with at a party. My kids always loved to stand on paddle boards and toss the watermelon back and forth to see who would fall off first! The buoyancy of watermelon also makes it useful for pool workouts by adding resistance when you push or pull it under watermelon.

Grilling Watermelon: Many of us are outside, grilling all the things in the warm weather months. Why not grill watermelon?! Grilling watermelon lends a smokey, savory vibe to the light sweetness that is oh-so magnificently summery. Watermelon Juice: Quench your thirst this summer with watermelon juice. I simply collect the juice from a watermelon while cutting it up. It’s easiest to do this if you cut it in a big rimmed baking sheet (so juices to spill out onto counter) and then pour juice out one corner of pan into mesh strainer over glass jar to remove any seeds and excess pulp. I also collect the juice that seeps out of cut watermelon and collects in my plastic storage container. FALL WATERMELON FIT TIPS

Watermelon Ruck: Rucking is a big fitness trend right now, but it’s actually ages old and really simple. A ruck is just a walk, hike, run, or other similar workout with a weight on your back. In simple terms, you wear a rucksack (aka backpack) and walk! Rucking and watermelon are a natural fit. Stick the watermelon in your backpack for weight to carry, and when you’re done, slice it open and enjoy as a refreshing, way to refuel.

How to Ruck-Cut a Watermelon: If you’re out on a ruck, then simple slices or wedges of watermelon with the rind on will be the easiest to prep and also to eat. You’ll want to carry a camping knife in a protective sheath for safety. If it’s a personal-sized watermelon, just whack it in half and dig the flesh out with a spoon (or an implement from your Swiss army knife).  Also, it’s a smart idea to stash a big zip-top bag in your rucksack in case you need to carry leftovers home!  If you’re not cutting the watermelon until you get home, check out my favorite way to cut and store a big watermelon in 5 minutes.

Iron Grip Exercises for Obstacle Course Racers and Hybrid Athletes

Having a strong grip super important and functionally relevant regardless of your age, gender, or active endeavors. I mean, even if you’re not an obstacle course racer, hybrid athlete, or powerlifter, you’re definitely going to want to give a firm handshake and be able to twist the lid off a pickle jar (or whatever) independently for decades to come. Plus, who knows – a strong grip could save your butt in a life-or-death situation like hanging onto a tree branch over a flood stage river (lol, hopefully just a hypothetical).

A number of studies have shown that weak grip strength can predict an increased risk of functional limitations, disability, and not living as long. Regardless of your age today, you’re getting older every single day. A stronger grip could improve your quality of life, and that’s the most important thing – but it can also help you pick up heavier weight and the gym and also improve your skills and ability to successfully complete obstacle course (like Spartan Race) obstacles like rigs, monkey bars, rings, farmer carries, the box, rope climb, wall climbs/jumps (especially Road to Sparta) and more.

Grip strength training for the win!

DEAD HANG

Hanging from a bar for as long as possible is a simple yet beastly method to improve grip strength, forearm strength, and pull-ups. When practicing your dead hang, use a forward-facing, closed-grip on the bar and hand until failure. Don’t be floppy, engage shoulders, chest and core. After resting for a few minutes, try to hang again until failure, you’ll likely feel the burn and not last as long. That’s okay! Rest again, and do a third rep until failure. Incorporate a “3-rep dead hang until failure” into your workout (or just whenever) at least a couple times a week.

Ways to Make it Harder:

  • Dead hang from towels looped over bar.
  • Dead hang wearing weighted vest
  • Try it one-armed
  • Dead hang and do a pull up every 10 seconds, without releasing from bar

FARMER CARRY

To start, you’ll need two dumb bells, kettlebells, or bar plates of the same weight (later on you can incorporate variations). The ideas is to grip a weight in each hand and walk for time or distance, keeping shoulders upright and core engaged. Farmers win the prize for lugging heaving stuff around on the daily and their strength and stamina has been immortalized forever with exercise named in their honor. Farmer’s Carries are a simple and effective exercise that will fire up your grip, get your blood pumping, and strengthen pretty much your entire body. It even calls on mental toughness, because about halfway in, you’ll want to quit!

Incorporate Farmer Carries into your workout several times a week and see gains in your grip and overall strength. You’ll have no problem carrying all the grocery bags inside with one haul! I like to program Farmer Carries between run intervals (without rest) to up the challenge of both exercises.

3 Ways to Make it Harder:

  • Use awkward, harder-to-carry weight like universal bars, sandbags, or loaded trap bars.
  • Use different grips: try pinch grip on plates, or loop a hand towel through top of kettlebell to be the handle. Spread your hand wide to grip over one end of a lighter dumbbell. Use “fat grips” or a wrapped towel around the bar or handle of your weight to create a larger circumference to grip.
  • Carry offset weight. For example, a lighter dumbbell on one side and a heavier on the other. OR just weight on one single side like a suitcase. Or carry one weight overhead and one by side. These these variations really tax grip and also cause core to work in overtime to stabilize.

NO GYM, NO WORRIES!

You can still work on your grip strength at home or in the office with just a few minutes of time. Dead hangs can be done at home with a chin up bar (this is pull up bar I have), and grip strength only limited by your imagination. There are lots of little gadgets around designed to improve grip strength like a Grip Strength Squeezer or Grip Ring Spartan. Heck, at the gym those bar collars are one of the most grip-centric things around and sometimes the hardest part of the lift. Instead of the “clenching in” grip, it’s also a smart idea to work the opposition motion, extending out. Put a rubber band around between your finger tips and first finger joints and then stretch hands outward for a strengthening stretch.
