While I’m not doing a Broadway boondoggle this fall, the hubby and kids do what we can to take in the ample  arts and events in Austin – last week we sat in jaw-dropped amazement at Kooza by Cirque de Soleil and tonight the family is just taking it easy with a movie at home. I’m trying to keep my diet cleaned up now that I’m deep into training for Spartan Beast and a subsequent marathon and have retooled my salty snacks too be less processed, gluten-free and more protein-oriented. Glueten Free Asiago Almond Cracker with Stella Cheeses

For tonight’s movie (Wild), I whipped up a batch of Gluten-Free Asiago Almond Crackers – bite-sized, crispy and filled with grain-free goodness. Not only to these herby crackers work for folks with gluten intolerances, they also fit into a Paleo (paleo-ish) diet that is willing to allow for a bit of cheese and butter.Gluten Free Asiago Almond Crackers are perfectly paired with a glass of wine!

Made with artisan cheeses, my Gluten-Free Asiago Almond Crackers are sophisticated enough for a fancy cocktail party – but the kids love them as well. They’re actually not at all difficult to make and a sensible snack option you can feel good about feeding your family with ingredients that include Stella® cheeses, gluten-free baking mix, almond meal, flax seed, thyme and butter. Simple goodness!

Gluten Free Asiago Almond Crackers can be cut out using your favorite cookie cutter!

When rolling out the gluten-free crackers, it’s easiest to do so between parchment or wax paper – use your favorite little cookie cutter or use a pizza cutter to make squares, diamonds or other shapes. I would also strongly suggest baking on Silpat or a sheet of parchment to prevent sticking and burning. The crackers made using Italian-style cheeses can be frozen for up to six months, so make a couple extra batches!

Gluten Free Asiago Almond Crackers - Artisan Cheeses

Deliciously savory, cheesy and herb-y, these gluten-free crackers are a delicious snack or addition to your appetizer spread when entertaining.
Course: Appetizer, Snack
Cuisine: American, Italian
Servings: 12 servings
Ingredients
  • 6 ounces grated Asgiago cheese
  • 3/4 cup gluten-free baking blend
  • 1/4 cup almond meal
  • 2 teaspoons flax seed
  • 2 teaspoons dried or fresh chopped thyme
  • 4 tablespoons cold butter
  • 4 tablespoons very cold water
Instructions
  1. Add flour, almond meal, flax seed thyme and cheese to work bowl of food processor. Pulse food processor to blend.
  2. Add one tablespoon of butter at a time, pulsing between, until dough is crumbly.
  3. crumbly. Slowly drizzle about 4 tablespoons of ice water into dough while food processor is on. Stop adding water as soon as the dough is moist enough to start pulling off edges of work bowl.
  4. Place ball of dough onto parchment paper. Flatten into a thick disk, wrap the dough up in the paper, and chill in the refrigerator one hour to overnight.
  5. After chilling and ready to make, preheat oven to 350 degrees.
  6. Roll dough between two pieces of parchment paper until it is evenly 1/8 inch thick. Use pizza cutter to cut dough into squares or use small cookie cutters to punch out shapes. Place uncooked crackers on a parchment-lined baking sheet into top one-third of preheated oven (to prevent burning).
  7. Cook for 8- 10 minutes until lightly golden brown. Let cook for 5 minutes. Store in air-tight container.

Summer should be a laid back season where kicking back, relaxing and living the easy life is top priority – but, DANG, I’m busier than ever.  Between juggling work projects, shuttling kids to far-away camps, getting my workouts accomplished (that’s a non-negotiable) and lots of organizing and shopping getting my oldest ready to head off to college, I need a break. If I can’t get a break, I at least need things to be easier – like no make-up, breakfast-for-dinner, do-your-own-laundry easy.

One way to keep life easy is to make uncomplicated yet healthy meals and snacks with five ingredients or less – and especially with ingredients that can be stocked in the pantry so there’s no rushing off to the store. I also have a little secret, when the stress starts piling up, I turn to chocolate (gasp). But, I’ve found several healthy ways to satisfy my sweet tooth without completely falling off the semi clean-eating wagon.  One of my treats is a carton of plain Greek yogurt with a bit of flavored Stevia chocolate syrup mixed in along my favorite cereal on top for crunch, don’t worry it’s gluten-free, bean-blend Power Os!

Ingredients
  • 12 ounces Chocolate Almondmilk Almond Breeze
  • handful ice
  • 4 ounces Mandarin oranges drained or can use fresh segmented
  • 1/2 tablespoon chopped pistachios
  • 1 teaspoon mini chocolate chips more if you must 🙂
Instructions
  1. Add chocolate almond milk and ice to blender, frappe until well blended. Pour in bowl and let set up in freezer for a couple minutes if needed.
  2. Top with oranges, pistachios and chocolate chips. Enjoy.

Bird is the Word for Protein #SayYesToJerky

Chicken Jerky makes a great snack to fuel your workouts or mid-day office munchies.I chickened out!  How did the word chicken become associated with retreat caused by fear or cowardice? I surfed around on the web and found a couple etymological explanations, with the most plausible being based on a ritual performed by army officers in ancient times. Apparently, before heading off into battle, military leaders would offer sacred chickens grain. If the chickens ate the grain, the battle would commence – but if they refused, it was a sign to withdraw from the fight (example, Battle of Drepana 249 BC).

So, I imagine that over the last couple thousand years, other phrases like “Don’t be a chicken” and “He’s a chicken #@$!” evolved from this phrase, sort of giving chicken, in general, a bad rap. But, there is a ton of cool facts about chicken including the fact that mother hens show empathy for their chicks and that the birds also have complex communication systems with more than 30 different vocalizations.

And, well, to put it bluntly, chickens are also a great food source for athletes – high in protein for muscle management, a source of tryptophan (like turkey) that can aid with restorative sleep, as well as numerous  benefits from vitamins and minerals. Other perks of poultry? Chicken is inexpensive compared to many other protein sources and the sheer volume of delicious chicken recipes is enormous – I probably have enough chicken recipes pinned on Pinterest and torn from magazine pages to last a lifetime!

So, basically the bird is the word – I say, it’s GOOD to CHICKEN OUT every now and then!

Refuel & Recover – Easy Protein Snacks for Athletes

Yup, I’m a serious snacker. But, I try my best to stay away from the sugary, salty, highly-processed stuff. This is a go-to snack for me, there is absolutely no cooking – just a little stirring! Take a 6-ounce cup of plain nonfat Greek yogurt and stir in ¼ up of your favorite berries like blueberries, strawberries or raspberries. Sprinkle 1 tablespoon of raw shelled hemp seeds on top for a nutty, crunch protein bonus. If you’ve never munched on hemp seeds, you should start now.
