Ingredients
  • 2 nectarines ripe yet slightly firm
  • 1 large avocado ripe yet slightly firm
  • ¼ cup diced red onion
  • 4 oz fresh mozzarella “pearls ” drained
  • 1 Tbsp lime juice
  • ¼ cup fresh mint chopped
  • 2 Tbsp balsamic syrup
Instructions
  1. Wash nectarines; remove pits. Chop into ½-inch pieces.
  2. Pit and peel avocado; chop into similar-sized pieces.
  3. Add nectarine and avocado to serving bowl along with mozzarella, red onion, and mint.
  4. Gently stir in lime juice as to not damage the fruit.
  5. Drizzle with balsamic vinegar and serve!
