Sleepy Tart Cherry Hot “Chocolate” – Caffeine Free

Today (January 31st) is National Hot Chocolate Day. I love me a hot beverage any time of day during colder weather, but tea, coffee and even a classic mug of cocoa can keep me up at night thanks to caffeine. Even though regular hot chocolate only has about 1/8 the caffeine of a cup of coffee, that little bit can still make a difference if you struggle with sensitivities, insomnia or other sleep issues. Plus, it’s so sugary – who wants that sugar buzz at night? Not me.Sleepy Cherry Hot Chocolate features tart cherry juice and almond milk that both help to promote sleep. Additionally, carob powder instead of cocoa power keeps it caffeine free

So, I made a few swaps to a rich and chocolaty recipe I make often for the kids. This homemade hot beverage will nutritiously satisfy your sweet tooth while helping you drift off into dreamland. Plus, it’s free of caffeine thanks to carob powder and also added sugars – only a bit of the natural sugars you get in the cherry juice.

Fig Cardamom Protein Mug Cake (Stevia-Honey Blend) #UseNectar

I make no excuses, I have a sweet tooth. Almost daily I eat chocolate, coated on almond for balance. Ha ha! I love fruit just as much as chocolate, and in my dream life would have a personal chef at my beckoned call to serve me sliced watermelon and pineapple drizzled with passion fruit. Oh, and figs. Give me all the figs, especially figs with honey. Fresh Figs with Truvia Nectar - a stevia-honey blend that is a great replacement for whole honey, sugar and agave.

Truvia NectarHowever, even too much of Mother Nature’s “candy” can start to rack up the calorie and carb count and that’s why I have fallen in love with a new product from a brand we all know, Truvia® .  Truvia® Nectar is a blend of stevia and honey that makes a great substitute agave, sugar, and honey – and it only has 10 calories and 2g carbs per serving.

Since I love having my “sweet” protein things for breakfast – protein shakes, mug cakes, fruit-speckled oatmeal and such, decided to make a protein mug cake using Truvia® Nectar – I’m calling it ‘Stevia-Honey Blend’ Fig Cardamom Protein Mug Cake and it works equally well for a healthy dessert as it does a protein-packed, lower-carb breakfast.

This recipe is as simple as lining a 16-ounce coffee mug with sliced fresh figs, adding a drizzle of the stevia-honey blend and then topping with my go-to recipe for a vanilla protein mug muffin (that has been sweetened with Truvia® Nectar and spiked with cardamom, cloves and cinnamon). You can use the protein powder of your choice and a regular flour or gluten free mix. The, just pop in the microwave for about 90 seconds and get your figgy jig on! Figs in Mug

Fig Protein Mug Muffin using Truvia NectarAfter “baking” in the microwave, you can enjoy this sweet treat right out of the mug with a spoon, but I prefer to serve it upside-down cake style and invert it only a dessert plate so that I can see the beautiful figs on top.  A dollop of Greek yogurt, extra slice of fig and drizzle of Truvia® Nectar make this mug cake recipe extra special.  Truvia Nectar on Fig Cake

Ingredients
  • baking spray
  • 2 large figs (any variety), sliced crosswise
  • 4 teaspoons Truvia Nectar (divided)
  • 2 tablespoons vanilla protein powder your favorite
  • 1/4 cup gluten-free baking blend
  • 1/4 teapoon baking soda
  • 1/4 teaspoon ground caradmom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • 6 tablespoons unsweetened vanilla almond milk
  • Garnish - Greek yogurt, more Truvia Nectar, more figs optional
Instructions
  1. Spray a large microwave-safe 16-ounce coffee mug with cooking spray. Line figs in bottom of mug and halfway up sides, drizzle figs with 1 teaspoon of Truvia Nectar. Set aside.
  2. In small bowl, combine protein powder, gluten-free baking mix, baking soda, cardamom, cloves and cinnamon. Stir together until combined well.
  3. Whisk in egg, almond milk and remaining Truvia Nectar until combined.
  4. Pour into sprayed coffee mug, over figs, and microwave 1 minute 30 seconds, or until cooked through. Microwave times may vary depending on your appliance. Cake will rise above rim and then “fall” once removed from microwave.
  5. Remove mug and invert onto plate, gently slide out cake. Let cool for 2 minutes. Top with Greek yogurt, additional figs and Truvia Nectar drizzle, if desired.

It’s a “Just Add Hot Water” Spicy Shrimp Spinach Soup that is perfect for an almost instant fix when you’ve got the hangries.  The idea is to fill up a glass jar about halfway with fresh ingredients (like marinara, veggies, brown rice and cooked shrimp), stick in the fridge until ready to eat, and then add boiling hot water and shake, shake, shake before slurping up! Add boiling hot water to a jar full of fresh ingredients, shake, pull out a spoon and . .. viola, you've got a quick and healthy meal solution for lunch or dinner! Yay for portable instant soup!

Ingredients
  • 1/2 cup Mezzetta® Marinara- Calabrian Chili & Garlic
  • 1 teapsoon egetable stock base paste (I like Better than Bullion brand)
  • 1 teasponn soy sauce
  • 1/2 cup cooked brown rice
  • 1 cup packed chopped fresh spinach leaves
  • 2 tablespoons finely chopped green onion
  • 2 tablespoons finely chopped yellow bell pepper
  • 4 ounces pre cooked shrimp
  • 1 1/2 cups boiling or very hot water
Instructions
  1. Layer all ingredients in quart-sized jar with sealing lid. Keep chilled for up to four days until ready to eat. When ready to serve, add 1 ½ cups boiling water (from microwave, tea kettle or coffee pot) and pour into jar. Add lid and shake well to combine, open and enjoy! Serves !

I have a zillion iterations, from Lemon Raspberry Protein Muffin Mug to this Blueberry Pecan Oat Protein Mug Muffin that I’m sharing today. I usually mix up this protein-packed breakfast scoop by scoop in the morning, but I love this one so much that I big-batched it! Meal prep, y’all – I can’t believe I’m so organized. Haha.

Love Grown FoodsSo, come morning, when I’m not feeling human, all that’s left to be done with my breakfast is add two liquid ingredient (egg white and almond milk) to my mix and stick in the microwave. I tried to use an egg white powder in the mix to make even more convenient, but I didn’t like that so much – plus, how is cartoned egg-white not convenient?! Other things to love  about this Blueberry Pecan Oat Mug Muffin recipe in addition to the homey taste is the wholesome nutrition – it’s gluten-free, sugar-free, low-cal and packed with protein (32 grams protein and about 240 total calories per serving).

When I say that this is a Master Mix Recipe, it means you can swap out the blueberries and pecans for the other dehydrated fruit and nuts of your choosing — bananas & peanut, pineapple & macadamia nut, raspberries & almond are just some ideas!

Whip up a big batch of this yummy protein-packed mug muffin mix and enjoy a quick, easy and healthy breakfast all week. Microwaves in less than two minutes!

Ingredients
Master Mix
  • 1 1/2 cup non-whey vanilla protein powder
  • 1/2 cup gluten free baking mix
  • 1/2 cup gluten free oats*
  • 2 tbsp chia seeds
  • 3 tbsp finely chopped pecans*
  • 1/4 cup stevia with 1/2 cup stevia to 1 cup sugar ratio
  • 1/2 cup dehydrated blueberries can sub regular dried
Wet Ingredients for Cooking:
  • 2 1/2 cup unsweetened vanilla almond milk parceled out 5 tablespoons per serving
  • 1 1/4 cup egg white parceled out 3 tablespoons per serving
Instructions
  1. To make master mix, add protein powder, baking mix, oats, chia seed, pecans, stevia and dehydrated blueberries to large mason jar or storage container and shake to blend.
  2. To prepare individual serving, add approximately ½ cup mix into large mug or microwave-safe bowl. Stir in 3 tablespoons of egg white and 5 tablespoons of almond milk. Microwave on high for between 1 and 2 minutes – exact time will vary by microwave strength (the magic time at my house is 90 seconds). Mug cake will rise dramatically while cooking and then settle back down and is “done” when no longer wet and has consistency of a bread pudding.

Raspberry Lemon Protein Mug Muffin – Single Serve

A Raspberry Lemon Protein Mug Muffin is a quick and easy solution to breakfast in the morning - or as a healthy, single-serve dessert before bed!I know it’s not spring yet, but I’m getting the fever to make delicious yummy things that remind me of warm weather.  My recipe for Raspberry Lemon Protien Mug Muffins reminds me of the lemon pound cake that has always been a family favorite, but typically reserved for dessert on special occasions. Single serve, and super yummy, this easy-to-make mug muffin makes a delicious morning meal or satisfying swap when you need a sweet treat at night.

Between protein powder and an egg white, there is plenty of protein to keep you from getting hungry before lunch  — plus, it’s under 200 calories and gluten-free.  Here are the specifics:  182 calories, 17g protein, 21g carbohydrate (5g sugar), 4g dietary fiber, 3g fat and calcium). This could vary slightly on the protein powder you are using.Meyer Lemon Raspberry Protein Mug Muffin I used Meyer Lemons in my recipe which are less acidic and slightly more sweet than a traditional lemon (actually, they are a hybrid lemon-orange) and I love the blemish-free large ones from Frieda’s Produce! Ingredients
  • 1 large egg white or 3 tablespoons egg white from carton
  • 1/3 cup unsweetened almond milk
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons vanilla protein powder
  • 2 tablespoons gluten free oat flour
  • 1/4 cup raspberries, halved
  • optional 2 packets Stevia, if protein powder unflavored
Instructions
  1. In 12 ounce mug, add egg whites, egg white, lemon juice and lemon zest. Whisk together with fork until well combined.
  2. Add in protein powder, oat flour and stevia, if needed. Stir until combined.
  3. Add raspberries and gently fold in.
  4. Place mug in center of microwave and cook on high for 60 to 120 seconds, until batter no longer raw (but it will be very moist). Actual cooking time will depend on the strength of your microwave.
  5. Stand by and watch muffin cook so that it does not overflow -- if it starts to rise too much, simply stop microwave, let it settle, and then restart.
