When I found out that today (February 22nd) was National Cook a Sweet Potato Day, I got really excited. It’s about time this delicious, nutrient-packed tuber got some attention other than in November. Tex-Mex Egg Drop Soup | 15-minute Meal

I’ve got so much Texas in me, it’s overflowing into my soup! Sleepy Tart Cherry Hot “Chocolate” – Caffeine Free

Today (January 31st) is National Hot Chocolate Day. I love me a hot beverage any time of day during colder weather, but tea, coffee and even a classic mug of cocoa can keep me up at night thanks to caffeine. Even though regular hot chocolate only has about 1/8 the caffeine of a cup of coffee, that little bit can still make a difference if you struggle with sensitivities, insomnia or other sleep issues. I want to give you plenty of time to start thinking of how you to pay homage to one of the world’s most popular desserts — will you partake in a cupcake, a layer cake, a Bundt cake, a sheet cake or even a single-serve mug cake? Heck, make them all!
