Making a healthy snack or healthy snack doesn’t have to be hard and my Turmeric Cucumber-Egg Bites are tasty proof of that! If you can boil an egg, you’ve got this! And, if you don’t have this essential life skill, I’ve seen pre-cooked, pre-peeled hard-boiled eggs at the market. Okay, I won’t like — I used pre-cooked, pre-peeled hard-boiled eggs for convenience (and to give my arthritis-y hands some relief from the chore).
Read on to get the 5 minute appetizer recipe, which is also a great keto snack, with only 25 calories and less than 1g carbohydrate per piece (and almost 2g protein).
Really, this keto snack just came to be out of necessity — I had unexpected company drop in to watch a football game. They looked hungry, but I had very little in the fridge or pantry that looked like traditional or even healthy football food. So, I took a chance and whipped up this healthy appetizer with ingredients I had on hand for my daily salad — a cucumber, hard-boiled eggs, and lite ranch salad dressing.
Seriously, the steps for making this 5 minute appetizer are so ridiculously easy. You cut the cuke in approximate 1/4″ slices. Slice the egg crosswise into 6 pieces (the two little end “butts” on the egg that show little or no yolk are not used and can be saved to eat later on a salad). In a small bowl, mix together a bit ground turmeric with prepared light ranch salad dressing (I use the fresh and preservative-free Lite Ranch from the Litehouse brand which you can find in the produce section on the refrigerated shelves). Then stack up the cucumber with egg and drizzle with the now beautifully orange dressing.

- 4 large hard boiled eggs, peeled
- 1 medium cucumber
- 1/3 cup prepared light Ranch salad dressing
- 2 teaspoons ground turmeric powder

Slice eggs crosswise into 6 pieces (the two "butts" on the end of the eggs will be set aside for another use).

Slice ends of cucumber and discard. Slice remaining cucumber into 16 slices, approximately 1/4 to 1/3 inch.

In small bowl, mix together prepared ranch and turmeric.

To assemble, stack an egg slice on top of cucumber slice. Drizzle with the Turmeric Ranch Dressing. Garnish with herbs, seeds, or whatever desired.
