Watermelon Benefits for Athletes + Easy Pre- and Post-Workout Recipes

Watermelon is a wonderful food for runners, athletes and every BODY with an active lifestyle, plain and simple! Over the years, I’ve shared so many healthy benefits of watermelon and creative ways to use watermelon in recipes AND workouts!

As we burst into spring and soon enough into summer, and fill our hours with more outdoor activities and recreation, I just wanted to touch on the fitness-focused nutritional benefits of watermelon.  These include 1) hydration, 2) natural energy, 3) workout recovery, 4) important vitamins and antioxidants

HYDRATION: Watermelon is a fruit you can eat and DRINK! You can actually drink watermelon by making watermelon juice, but eating it is a drink in itself – watermelon is 92% water. For example, 16 ounces of watermelon hydrates your body with about 14 ¾ ounces of water! I think that’s why it tastes extra refreshing after a summer run or day working in the yard. There are many other ways to “drink” your watermelon, these are some of my favorites:

Watermelon Electrolyte Ice Cubes: Watermelon juice and lime juice mixed with Himalayan sea salt, baking soda and maple syrup, frozen and meant to be melted straight in the mouth or dissolved in water. A great way to prevent cramping in high sweat-output athletes.

Watermelon Coconut Cream Soda: Cure your cravings for bubbly without drinking sugary, chemical-laden soda with this easy-to-make fountain-style drink made with watermelon juice, coconut cream, sparkling water and stevia.

NATURAL ENERGY: Watermelon is also a source of natural sugars to fuel your adventures. Most runners go further and farther fueled with carbohydrates! Some mistakenly avoid watermelon thinking it is too high in sugar, but really, it’s quite reasonable and most everyone can eat it as part of a balanced diet. To understand this more, you need to realize that the watermelon Glycemic Load (GL) is actually low at 2 for 100grams of watermelon . . . even though the Glycemic Index (GI)  which everyone seems to get stuck on is considered higher at 72 on a 100 scale (BTW, GI isn’t everything, calories vitamins and other nutrients are important too – not JUST the GI number and that’s why you need to consider the GL number too). In fact, many nutritionists feel Glycemic Load (GL) gives a more realistic value of how different foods affect blood sugar than GI because it also takes into consideration the amount of carbohydrate in the food, not just how quickly it turns to glycogen. For reference, foods with a low GI level (under 10 considered low, over 20 considered high), are less likely to raise your blood sugar levels.

WORKOUT RECOVERY: Not only does watermelon replenish your body’s glycogen stores after running and rehydrates with fluids, but it also contains L-Citrulline. Exciting new areas of study suggest that L-citrulline (286- 1266 mg per 2 cup serving) in watermelon may help to support vascular health and help maintain healthy blood flow. With respect to athletic benefits, the optimized blood flow created by l-citrulline may help performance and accelerate recovery. Here are a few post workout watermelon beverages I like to enjoy after a run or workout.

Watermelon Beet Workout Recovery Smoothie: A satiating treat after a hard workout – a protein boost for muscles from cottage cheese and the l-citrulline helps lessen next-day soreness.

Hot Spiced Watermelon Lemonade with Collagen:  In cooler weather, I can be chilled to the bone – especially once I stop running. This hot drink is a watermelon workout recovery treat that warms me up, provides all the benefits of watermelon but also with some collagen for joint and muscle management,  plus turmeric for anti-inflammatory relief.

LYCOPENE & OTHER IMPORTANT NUTRIENTS: Lycopene is a carotenoid in watermelon that makes the hue so beautifully red. In fact, watermelon is the “lycopene leader,” containing higher levels of lycopene than any other fresh fruit or vegetable (12.7 mg per 2-cup serving) – even tomatoes that get a lot of attention. Researchers linking lycopene to benefits in positive cardiovascular health. Also, great news for outdoor lovers! While not a substitution for sunscreen, lycopene in watermelon is an antioxidant that is being studied for its role in sun protection when eaten.  A 2-cup serving of watermelon is also a good source of vitamin C (21% RDI) and Vitamin A (18% RDI) and also some b-vitamins, magnesium and potassium.

Here are a couple of my favorite watermelon and tomato recipes, for a double-dose of lycopene and so many vitamins!

HOW TO EAT WATERMELON: The easiest way to eat watermelon is to slice it up and enjoy cold! A good watermelon is even delicious room temperature, and some science shows that it could maintain more nutrients that way. One thing to know about watermelon temperature though is that if you buy it cold, it should stay cold. But if it is room temperature, it can last about three weeks from harvesting (so I would say 1 week at home, before cut open, just to be safe).

I also think watermelon is amazing with simple seasonings (check out these 4 Ways to Season Watermelon that will Blow Your Mind) or even grilled. Also, another way I add watermelon to my day is just to use as an ingredient in salads (like this quinoa watermelon salad) or no-recipes “throw everything together” watermelon salads (see above) with whatever I have on hand! Today it was watermelon, oranges, avocado, spinach, kale, Marcona almonds, coconut, and dandelion flowers (yes, they are edible)!

  • 4 oz. full fat cream cheese softened
  • 1 tbsp. full fat sour cream
  • ½ cup super-fine almond flour
  • 2 tbsp. coconut flour

  • ¼ cup unsweetened shredded coconut divided
Instructions
  1. Mix together cream cheese and sour cream until blended. Next stir in almond flour, coconut flour, collagen powder, and 2 tbsp. shredded coconut (sprinkle remainder of coconut on a plate. Now, place “dough” in fridge to firm up for 25 minutes. Remove and make approximate 1 tbsp. balls by rolling between clean hands. Then roll in coconut to stick on top, repeat with remaining dough. Makes 10. Store leftovers in air-tight container in fridge for up to 1 week.

5-minute Party Prep with (Zero ABV) Red Raiderade and Pineapple-Bacon Cream Cheese Dip

Whether it’s football season, basketball season or summer break sitting out by the pool, we all want some tasty, easy-to-make snacks and beverages to tide us through the fun.

I decided to pay tribute to Texas Tech University, mainly due to a new Red Raider in the family this Fall (my youngest son) and also taking into account my husband and I are both graduates of this fine institution in Lubbock, just south of the Panhandle.  Hit ‘em, Wreck ‘em, Texas Tech!!

In just five minutes, I can whip together a non-alcoholic drink (Red Raiderade – a Michelada mocktail) and snack dip that the whole gang loves thanks to a few of my new favorite products. Keep reading for all the delicious deets!

First, let’s start with the drink Zero-AFB “Red Raiderade” – think of a Michelada mocktail or Ojo Rojo that is alcohol free and you get the idea, but lighter, fewer calories and no hangover. These types of tomato beer drinks are so popular in Texas and so refreshing with a spicy bite! Instead of a Mexican beer though, I just substitute unsweetened sparkling water with lime or lemon flavor in my non-alcoholic Michelada version. This sparkling water, along fresh juice of a lime, Clamato juice and a splash of Tabasco and Worcestershire sauce are all poured over ice in a tall pint glass – and I garnish the glass edges with Tajin!

Speaking of pint glasses, I’m feeling super school spirited with College Town Glassware from Well and Told. Get a pair of classic pint glasses printed with the map of your favorite college town – I picked Lubbock for Texas Tech University, but there are lots of choice from around the country.

5 Minute Party Prep with seedz crackers, bacon pineapple dip and no alcohol Red Raiderade (like a Michelada tomato beer cocktail)

Now, for snacks in a snap, you can’t go wrong with crackers and cream cheese spread – that easy-peasy classic preparation of opening a brick of cream cheese and pouring preserves over the top. However, instead of my typical Jalapeno jam, I found these fabulous “everything sauces” from Ricante – made in Costa Rica and now all over the U.S. (look for them in Whole Foods or on Amazon). There are four different choices in this line up of spicy tropical sauces (which are friendly for keto, gluten-free and Whole30 diets).

Use them for dipping, marinating, salad dressing and reducing/glazing with meats – I chose the Tropical Pineapple Habanero Infused Everything Sauce and just doused it right over the cream cheese and then dumped on extra diced pineapple and crumbled bacon. Pineapple Bacon Cream Cheese Dip will make you feel very tropical and no worries! It’s SO GOOD with veggies sticks or crackers.

And speaking of crackers, I don’t set out crappy crackers for my 5 minute party prep – lol! Only the best stuff for me, the family and lucky guests — I like to serve Top Seedz Crackers. Instructions
  1. Wet rim of pint glass and set inverted on plat sprinkled with Tajin, move around to get some to stick to the rim.

  2. Turn back over and fill pint glass 1/3 with ice.

  3. Pour in Clamato, sparkling water, lime juice, Tabasco and worstershire sauce, gently stir with tall spoon or straw.

  4. Add any garnishes desired, enjoy.

Paleo and gluten0free dredge ingredients for Crispy Coconut Fish Sticks (with Lingcod)

The recipe for lingcod fish sticks (or any other white fish) couldn’t be any easier and fast, rendering it a busy weeknight dinner solution. Make a simple egg wash and dredge with shredded coconut, almond meal and a few herb/spices (bonus, the coating is gluten free and Paleo). Then bake for approximately 15 minutes at the same time what you whip-up a simple, 3-ingredient dipping sauce that warms in the microwave. Boom, bam – that’s it!

Pro tips:

  1. When dipping and dredging fish, use one hand for the egg and the other hand for the coconut mixture to keep fingers from getting overly gunked up.
  2. Achieve maximum crunch on these crispy coconut fish sticks by baking on a mesh crisping tray designed for the oven. This allows hot air to circulate all around and make both top and bottom of the coconut fish sticks crispy.
  3. Meal prep more than one batch and freeze in a single layer, in freezer-proof container. To reheat from frozen, place on crisping tray for approximately 10 minutes in a 400F degree oven, or until warmed through.

  • 1 lb skinless filet of firm white fish like lingcod halibut, tilapia, cod, pollock, haddock
  • ½ cup unsweetened shredded coconut
  • ½ cup almond meal
  • 1 tbsp freeze-dried parsley or dried
  • 2 tsp garlic salt
  • 1 tsp sweet paprika
  • ¼ cup sugar-free peach preserves
  • 1 tbsp coconut aminos can substitute soy sauce if not Paleo or gluten-free
  • 1 to 2 tsp sriracha sauce paleo version preferably
Instructions
  1. reheat oven to 375F degrees
  2. Cut fish into approximate ¾” wide x 1 ½” long sticks or nuggets. Try to make pieces even in size and thickness so that it cooks evenly.
  3. In shallow dish, mix together coconut, almond meal, parsley, garlic salt and paprika.
  4. In small bowl, whisk egg.
  5. Dip fish pieces, one at a time, into egg wash and then roll into coconut mixture, pressing to stick on if needed. Place on baking sheet, preferably with mesh cooking rack inside to elevate and allow heat circulate. Repeat with all fish chunks.
  6. Bake at 375F for approximately 12 to 15 minutes or until fish white and flaky and turning lightly golden brown on top.
  7. While fish baking, mix together preserves, coconut aminos and sriracha and warm up in microwave for about 30 seconds.
  8. Remove fish from oven and serve with warmed sauce!

  • 2/3 cup 2% cottage cheese
  • 2 tbsp. vanilla collagen powder if substituting plain collagen, add 1 little packet stevia and 1/4 tsp vanilla extract

  • 1 small strawberry, diced
Instructions
  1. Add cottage cheese and collagen to blender, process. Mixture will be thick and you will have to stop blender once or twice to scrape down sides — keep blending until smooth.

  2. Add chocolate chips to this mixture and blend for 30 seconds or until they are chopped up a bit.

  3. Spoon 1/2 of the cheesecake mixture into a small container, drizzle with chocolate sauce. Add remaining cheesecake mixture on top and add diced strawberry and extra chocolate chips if desired.
