Nut Butter Cookie Dough Protein Bites are a healthier way to satisfy a sweet tooth while helping mend muscles after a run or workout.Yes, I have been guilty of eating REAL cookie dough and a lot of it. Once as a kid, my indulgent grandmother let me eat as much as I wanted while my annoyed mother looked shaking her head and telling me I was going to get sick. So, what happened? I barfed . . . mothers are always right. While I still like to make “real” chocolate chip cookies for the family now and again, I try to stay out of the dough (as much as I can). My recipe for Nut Butter Cookie Dough Protein Bites is a healthier option with no raw eggs, no gluten, and no added sugar except for a few chocolate chips.

jen and dough boyWith less than 100 calories and almost 5 grams of protein, one these yummy little no-cook treats also make a sensible alternative to eating that whole chub of cookie dough and turning into the Pillsbury Dough Boy (but, darn if he isn’t the cutest thing).

Your sweet tooth will be satisfied with the smattering of chocolate chips, but you can also omit these from the recipe.

Nut Butter Cookie Dough Protein Bites

Ingredients
  • 2/3 cup protein powder (2 scoops)
  • 1/4 cup almond meal
  • 1/2 cup gluten free oat flour
  • 1 teaspoon chia seeds *Omit if using nut butter blend already including this
  • 1 teaspoon flax seeds *Omit if using nut butter blend already including this
  • 1/2 cup nut butter of choice
  • 2 to 3 tablespoons unsweetened almond milk
  • 1 tablespoon liquid stevia more or less to taste
  • 3 tablespoons mini chocolate chips
Instructions
  1. Add protein powder, almond meal and oat flour in bowl; stir to combine. Stir in chia seeds and flax seeds (if using a nut butter that already includes these seeds, simply omit these ingredients).
  2. Add nut butter, 2 tablespoons of almond milk and stevia to bowl. Use spatula to combine well; mixture should be a bit crumbly, but hold together when pinched between fingers. If too dry, add additional almond milk a teaspoon at a time.
  3. Stir in mini chocolate chips.
  4. Roll approximately 1 tablespoon between palms of had to form ball; repeat with remaining dough.

Personally, I prefer a drink over food because it’s easier for me to stomach before a workout — unfortunately, many beverages need refrigeration. However, I came up with a delicious recipe for Dark Chocolate Espresso Pre-Workout Shake that can be prepared right on the spot with no blender, fridge or heating appliances.

Seriously easy, all you do to make the “recipe” is bring along a mason jar filled with a bit of dry honey crystals and a half-scoop of your favorite chocolate protein powder. Before drinking, just add your 8-ounce can of espresso, 4 ounces of water and a packet CocoaVia® Daily Cocoa Flavanols Extract Supplement (Unsweetened Dark Chocolate). If you don’t want to use the canned espresso (or can’t find it), you can just add black coffee to the Mason jar brought from home – however, I do recommend the 8-ounce can of High Brew Double Espresso because it’s convenient and is made with just a light touch of cane sugar. Whole Foods usually carries it.

Shake, shake, shake up everything in the Mason jar and enjoy – this pre-workout shake isn’t too filling, so it stays down even if burpees are on the whiteboard.  Another thing, and GENIUS, if I might add – if you are in a situation where there might be multiple “mason jars” hanging around or if you want to differentiate concoctions in your own fridge, those cheapie rubber bracelets fit perfectly around the rim – everyone gets a different color! Kiss of Honey Strawberry Hot Chocolate

Kiss of Honey Strawberry Hot Chocolate (serves 1)

  • 8 ounces fat-free (skim) milk
  • 2 to 3 large strawberries, hulled and halved
  • 1 ounce quality white chocolate, broken into bits
  • ½ to 1 teaspoon Nektar Honey Crystals (depending on sweetness preference)
  • Garnish: colored sugar or sprinkles, if desired

To make, place milk and strawberries in a blender.  Blend together for approximately 45 seconds until strawberries are incorporated and froth areating up on top (strangely enough, skim milk works much better than higher fat milks).

Place blended mixture into small saucepan along with honey crystals and white chocolate.  Heat over medium-low heat, stirring gently until white chocolate is melted and drink is heated through. Pour into 12-ounce mug, top with colored sugar or spinkles if desired.

Better-For-You Chocolate Mint Syrup and Greek Yogurt Parfaits

I have a serious sweet tooth. It’s not a secret that I like to start (and end) my day with a little bit of chocolate goodness. Studies have shown that certain flavonoids in chocolate may decrease recovery time and improve endurance in athletes and, goodness, how I hope that is true! However, munching down on chocolate candy or ice cream isn’t really going to help me achieve my 2016 health and fitness goals – there’s a lot of extra sugar and fat I don’t need in those treats.  When I eat less processed sugar, I have more room in my diet for protein, vegetables and healthy whole grains and that’s what keeps me fueled up to kick butt on a daily basis.

Today, I’m sharing the recipe for “Better-for-You” Chocolate Mint Syrup (which can easily be tweaked without the mint) and my favorite ideas for Greek Yogurt Parfaits. I could eat a chocolate Greet yogurt parfait at breakfast, post-lunch and as a bedtime snack . . . and sometimes have!

Ingredients for Truvia Chocolate Syrup

“Better For You” Mint Chocolate Syrup (Stevia)

  • 2 tablespoons chopped fresh mint, or freeze-dried mint
  • 1 cup water
  • 6 tablespoons Truvia® Natural Sweetener Spoonable
  • 1 cup unsweetened dark cocoa powder
  • 1 teaspoon vanilla extract
  1. Add mint to teaball / tea infuser and drop in small saucepan with water. Bring water to a rolling boil over medium high heat for 1 minute; turn off heat and let steep for 5 minutes.  Remove and discard mint.
  2. Mix in Truvia Spoonable into hot water, stir until dissolved. Turn burner back on to medium low, whisk in cocoa powder until incorporated and smooth, cooking for about 1 to 2 minutes.
  3. Remove from heat, stir in vanilla. If needed whisk in a tiny bit more water to achieve desired consistency if too thick.
  4. To make “regular” non-mint chocolate stevia syrup, simply bring water to boil in first step – but omit mint.
  5. May store in refrigerator for up to a month. Makes about 12 ounces.

As I mentioned,  “Better For You” Mint Chocolate Syrup is the bomb drizzled over Greek yogurt, but even better STIRRED in! Check out these yummy ways, I used the chocolate syrup made with Truvia Spoonable Natural Sweetener:

Dreamy Orange Vanilla Protein Fluff #1UpYourCup

We are several weeks into 2016 and I’m checking in to report how I’m sticking with my New Year’s health and wellness best intentions.  Increasing my flexibility? Taking baby steps, but to say I’m there is a stretch! Sleeping better?  Still just day dreaming about it. Drinking more water? That’s a check!  Keeping with my fitness routine? My recipe for Dreamy Orange Vanilla Fluff in an Orange Bowl incorporates vanilla protein powder to provide even more protein– after intense workouts and long runs, I need to PUMP IT UP with 20 to 25 grams of protein to help my taxed muscles recover.   Yoplait® helps me get a good start on that goal as I 1-Up my Cup!  This easy recipe doesn’t necessarily need to be served in an orange “bowl” and be tweaked to work with any of the yogurt flavors that appeal to you – how amazing would Chocolate Cherry Cupcake Fluff be?!

2 small oranges or tangerines 1 scoop ( 2 cartons Orange Crème Light Yoplait® 2 teaspoons mini chocolate chips 1 tablespoon chopped pistachios
Course: Breakfast, Dessert, Snack, Worout

Servings: 2 servings (2 halves each)
Ingredients
  • 2 small oranges or tangerines
  • 1/3 cup vanilla protein powder of choice (casein works best)
  • 2 small cartons Orange Crème Light Yoplait®
  • 2 teaspoons mini chocolate chips
  • 1 tablespoon chopped pistachios
Instructions
  1. Slice oranges (or tangerines) in half crosswise. Use serrated spoon to carefully remove segments, leaving outer peel intact. Set scooped out “bowls” aside.
  2. Squeeze juice out of extracted citrus segments (approximately ¼ cup). Use whisk to incorporate protein powder, adding a bit more juice or water if mixture gets too thick – but it should be pudding like.
  3. Gently fold in yogurt until just combined. Spoon into orange cups.
  4. Place in freezer to set up along with any excess “fluff” still in bowl. To serve, top filled oranges with remaining semi-frozen fluff and a sprinkling of chocolate chips and pistachios.
