I used my Omni Pro Air Fryer from from Instant Pot to make my favorite zucchini recipe. In just about 6 to 8 minutes, an air fryer gets everything nice and crisp. You CAN use a traditional oven at 400F degrees for about 10 to 12 minutes, carefully flipping the chips halfway through.

Ingredients
  • ¾ lb. zucchini
  • ½ cup almond flour
  • 3 ounces all-cheese snack Moon Cheese, Whisps, etc.. Or, may substitute a very dry cheese like Parmesan
  • 1 tablespoon dried parsley
  • 2 eggs
  • Optional: dipping sauce
Instructions
  1. Cut zucchini into ¼” slices crosswise. Pat dry if excess moisture.
  2. In baggie, crush cheese snack into a coarse powder.
  3. In a bowl, mix “cheddar crumbs” with almond flour and dried parsley.
  4. Whisk eggs in shallow bowl. Dip each slice in egg and then dredge in cheese coating.
  5. Place crumb-coated zucchini slices on basket of air fryer and cook 390F degree air fryer (pre heated) for 6 to 8 minutes.
  6. Depending on the size of your air fryer, you may have to make in two batches.
  7. Remove from air fryer and serve with dipping sauce of choice.
  8. Store covered leftovers in fridge. To reheat, place cold zucchini chips in the air fryer basket and reheat for a couple minutes – good as new!

Ingredients
  • 1 large sourdough bread round
  • 1 stick Butter melted
  • 2 tsp. minced garlic
  • 1 tsp. Italian seasoning
  • 12 oz. ground beef
  • ½ tsp. salt
  • ½ tsp. red pepper flakes
  • 8 oz. shredded cheese of choice
  • 1 tablespoon finely chopped fresh herbs like parsley or basil for sprinkling on top
  • Optional: 1 cup warmed marinara sauce
Instructions
  1. Preheat oven to 375F degrees.
  2. In skillet, brown ground beef over medium-heat until cooked through – drain off any excess grease. Season with salt and red pepper. Set aside.
  3. Place soughdough load on baking pan and a sheet of foil Use serrated knife to slice ALMOST to the bottom of sourdough round in 1/2” slices. Don’t slice all the way down, leave about ¼” inch at the bottom so that loaf stays intact. Next, make ½” slices going in the other direction to create a grid of long bread sticks that can be pulled out later.
  4. Melt butter in small microwave-safe dish for approximately 20 – 30 seconds, stir in garlic and Italian seasoning. Using a small spoon drizzle garlic butter down into the crevices of bread.
  5. Next fill the crevices with ground beef and cheese, pushing down as needed.
  6. Pull foil up around bread, topping loosely with more foil if needed. Bake for 25 to 30 minutes until heated through and cheese bubbling.
  7. Sprinkle with fresh herbs and serve with warmed sauce.

Jennifer Fisher 3m Half Marathon Blue DiamondThis past weekend, I had my own “game day” of sorts running the 3M Half Marathon in Austin, Texas. The weather was perfect, the point-to-point course is fast and I was pretty well rested. Alas, there was no PR, I was a good 4 minutes of my best time on this fast course. Servings: 12 2 appetizers per person
Ingredients
  • 1 tablespoon soy sauce
  • 1/3 cup plain Greek yogurt
  • 1/4 teaspoon wasabi powder
  • 1 cup frozen pre-cooked small salad shrimp, thawed and drained
  • 2 radishes, chopped finely
  • 1 yellow bell pepper, chopped finely
  • 1/4 cup water chestnuts, chopped finely
  • 2 green onions, bulbs and stems slices finely
  • 1 large cucumber, cut crosswise into ¼” thick slices (24 slices)
  • 24 Wasabi & Soy Sauce” Blue Diamond Almonds (from 6-oz. can)
Instructions
  1. In medium-sized bowl, whisk together soy sauce, yogurt and wasabi powder until combined.
  2. Add thawed shrimp, radishes, bell pepper, water chestnuts an d green onions to bowl, toss gently until coated with Greek yogurt mixture.
  3. Spoon 1 tablespoon of shrimp mixture in center of cucumber round; top with almond. Repeat to finish remaining appetizers.
