Beef Enchilada Instant Pot Meatballs

And, rather than slaving away all day in the kitchen with a slow-simmer, I’ve cut the cook time into a tiny fraction of old-school recipes thanks to the Instant Pot.  Check out my recipe for Beef Enchilada Instant Pot Meatballs because, yee-haw, it’s what’s for dinner in 30 minutes.Beef Enchilada Instant Pot Meatballs

Baked Balsamic Beet Purple Sweet Potato Chips

When that craving for salt & vinegar chips strikes, make your own – they so much better for you than store bought! My Baked Balsamic Beet Sweet Potato Chips turn crunchy in the oven, rather than being fried in hot oil -that’s just some clean eating common sense.
