We are several weeks into 2016 and I’m checking in to report how I’m sticking with my New Year’s health and wellness best intentions.  Increasing my flexibility? Taking baby steps, but to say I’m there is a stretch! Sleeping better?  Still just day dreaming about it. Drinking more water? That’s a check!  Keeping with my fitness routine? Of course, that’s the fun part of my day!  Whipping up creative protein-rich meals and snacks? Naturally – some good things never change!

 

One thing that hasn’t changed for me over many, many years is my love for Yoplait® yogurt. For example, adding a little carton of Greek 100 is a great way to pump up my smoothies with a creamy texture and boost of protein. My recipe for Dreamy Orange Vanilla Fluff in an Orange Bowl incorporates vanilla protein powder to provide even more protein– after intense workouts and long runs, I need to PUMP IT UP with 20 to 25 grams of protein to help my taxed muscles recover.   Yoplait® helps me get a good start on that goal as I 1-Up my Cup!  This easy recipe doesn’t necessarily need to be served in an orange “bowl” and be tweaked to work with any of the yogurt flavors that appeal to you – how amazing would Chocolate Cherry Cupcake Fluff be?!

2 small oranges or tangerines 1 scoop ( 2 cartons Orange Crème Light Yoplait® 2 teaspoons mini chocolate chips 1 tablespoon chopped pistachios
Course: Breakfast, Dessert, Snack, Worout
Cuisine: American
Servings: 2 servings (2 halves each)
Ingredients
  • 2 small oranges or tangerines
  • 1/3 cup vanilla protein powder of choice (casein works best)
  • 2 small cartons Orange Crème Light Yoplait®
  • 2 teaspoons mini chocolate chips
  • 1 tablespoon chopped pistachios
Instructions
  1. Slice oranges (or tangerines) in half crosswise. Use serrated spoon to carefully remove segments, leaving outer peel intact. Set scooped out “bowls” aside.
  2. Squeeze juice out of extracted citrus segments (approximately ¼ cup). Use whisk to incorporate protein powder, adding a bit more juice or water if mixture gets too thick – but it should be pudding like.
  3. Gently fold in yogurt until just combined. Spoon into orange cups.
  4. Place in freezer to set up along with any excess “fluff” still in bowl. To serve, top filled oranges with remaining semi-frozen fluff and a sprinkling of chocolate chips and pistachios.

Salty Sweet Smokehouse Almond Bacon GranolaThis football season, I’m serving up Salty-Sweet Smokehouse Almond Bacon Granola – a real winner based on how many times I have to refill the bowl even before half-time!  People are like “bacon granola?!” and I’m like “heck, yeah!” – it’s spicy, sweet, smoky, salty, what more could you want? Everyone knows that bacon makes everything better, but so do almonds!  Almonds are little powerhouses of nutrition – a handful (about an ounce or 23 nuts) has 163 calories, 6 grams of protein and 14 grams of heart-heathy fat along with all sorts of essential vitamins, minerals and other nutrients.  I especially like almonds for a snack because they are hunger-squashing and keep me satisfied until my next meal!

A bowl full of this Salty-Sweet Smokehouse Almond Bacon Granola is definitely going to satisfy the snack cravings of the biggest armchair linebacker or peppiest cheerleader at your party. The bacon definitely pushes this easy granola recipe into the Snacking Hall of Fame (okay, I made that up), but it is also balanced with healthy ingredients like whole grain oats, dried pears (or apples), quinoa, flax seeds, real maple syrup and more.

Spicy-Sweet Smokehouse Bacon Almond Granola

Take game day flavor to the next level with with this bacon and almond granola that is spicy, sweet, salty, smoky -- and so amazingly delicious.
Cuisine: Southwestern
Servings: 4 cups
Ingredients
  • 1 6 ounce can Blue Diamonds Smokehouse Flavor (divided)
  • 6 slices thick hardwood smoked bacon
  • 1 to 2 teaspoons ground cayenne pepper depending on "spiciness" desired
  • 1/2 cup real maple syrup
  • 2 cups oats
  • 2 tablespoons uncooked quinoa
  • 2 tablespoons flax seeds
  • 2/3 cup diced dried pears or apples
Instructions
  1. In small food processor or with knife, chop 3 ounces of almonds (1/2 Blue Diamond can); leave other half of can whole. Set both aside.
  2. In large skillet, cook bacon over medium-high until moderately crispy (don’t over-cook). Remove bacon to drain on paper towels and coarsely chop up. Don’t dispose of bacon fat.
  3. Keep about ½ cup of bacon fat in skillet along with all the delicious crispy bits left behind. Add cayenne pepper and stir into bacon fat until fragrant, about 1 minute. Add maple syrup to this mixture, stirring constantly and allowing to bubble up for about one minute. Remove from heat. In medium bowl, toss together oats, quinoa, flax seed, chopped bacon, dried pears, chopped almonds and whole almonds. Stir oat mixture into bacon fat - maple syrup mixture until evenly coated.
  4. Preheat oven to 325 F degrees. Spread granola mixture out onto baking sheet and lightly press down with back of spoon to compact a bit.
  5. Bake at 325 F for about 10 – 12 minutes. Remove from oven and allow to cool for 15 minutes and them break into chunks

Coconut Chia Smoothie Bowl is a tasty way to get your crave on while kick-starting the day with a little caffeine, fruit, protein and fiber. Go breakfast!
Course: Breakfast, Dessert, Smoothies, Snack
Cuisine: American
Servings: 1 serving
Ingredients
  • 1 1/2 cups Almond Breeze Unsweetened Almond Coconut Milk divided
  • 1 tea bag chai tea
  • 1/2 large banana frozen
  • 2 packets stevia if desired
  • 1 cup ice more or less, depending on consistency
  • 1 tablespoon raw shelled hemp seed
  • 1 tablespoon cacao nibs
  • 1 tablespoon unsweetened flaked coconut
  • 1 large strawberry sliced
Instructions
  1. Heat half milk (3/4) cup in microwave safe mug for 1 1/2 - 2 minutes, until very hot. Add tea bag and steep for 5 minutes.
  2. Remove and discard tea bag and add remaining milk to help cool off tea. Put in freezer for 15 minutes to cool down further, if needed.
  3. Add cooled tea-milk mixture to blender. Add frozen banana, stevia and ice and blend until smooth. Add more ice or banana to make thicker, if needed. Pour into bowl.
  4. Top with hemp seed, coconut, cacao nibs and strawberries. Eat immediately.
