Almond Joy Cookie Brittle { Gluten Free }

Tracking PixelThis is a sponsored post written by me on behalf of Bob’s Red Mill.

I’ve been baking for others, ever since I was a grade school girl! I would pour over my now vintage children’s cookbook thoughtfully deciding which recipe would suit a family member or friend best. A specialty I made for my little brother nearly every Saturday morning was a muffin dunked in butter and rolled in cinnamon sugar. I have no doubt he’d remember, if you asked! Almond Joy Cookie Brittle with Bob's Red Mill Gluten-Free Baking Blend

Fall for Holiday Smoothies at Red Mango

This post is sponsored by Red Mango, however the opinions about my experience are totally my own.

When I searched directions to Red Mango, a yogurt and smoothie franchise I’d been hearing great things about, the “popular times” chart next to the Google map indicated that a surprising amount of people are there around 6pm. Yay, I knew smoothies and/or frozen yogurt before (or in lieu of) dinner was a legit thing!  Red Mango austin

Hey, I’m always starving post workout, so I don’t care who knows I’m that girl who likes to be first in line to get her food. The way I see it is that I earned my smoothie with sweat equity and, in fact, if I don’t refuel with some healthy carbs and protein pronto, I’m going to lose my hard-earned investment. Finding out Red Mango was offering fall-flavored smoothies for the holiday season was the pumpkin-spiced cherry on top of the day – read on to find out: Continue reading

DIY Mocha Honey Race Fuel for Marathon, OCR and Ultra Running

You can’t rev your engine and keep the proverbial pedal to the metal in a race without some quality fuel in the tank. Okay, that’s a lot of metaphor to chew on in one sentence. So, in straight forward English let me say, that for optimal performance, you need quality carbs before and during your marathon, obstacle course race, triathlon, ultra or other endurance sport. Mocha Honey Race Fuel

Far too many times, I’ve gone without much fuel on the course, I’ve attempted the alternative approach of “fat-loading,” or in a pre-bonk induced panic I’ve eaten whatever product was being handed out on the course.  I’ve found that my best chance for success is to toe the start line with a strong sports nutrition plan in hand, and this includes one of my many homemade race fuels. Today I’m sharing my recipe for Mocha Honey Protein Sticks. Read on to get the instructions: Continue reading

Grilled Cranberry-Orange Flank Steak for Holidays

I’ve been an “elite” runner sponsored by the Texas Beef Team now for at least 6 years and am not slowing down. Okay, okay, my pace-per-mile may have bumped up a teeny tad due age (hey, I’m 50!) but I credit eating lean beef, in large part, to staying fit, fast, and on fire! More on that later.Cranberry Orange Flank Steak

Running aside, another thing that’s not slowing down is my love for grilling, even in the fall and winter months. Thanks to more delightful than frightful weather in the Lone Star State, I get to grill nearly the entire year ‘round. For the holidays, you can often catch me out on the patio, grilling up something to be very thankful for – like this Cranberry Orange Flank Steak. Read on to get more deets and the full recipe! Twice Baked Creamy Ranch Broccoli Potato Bites

‘Tis the season for side dishes and my Twice-Baked Creamy Ranch Broccoli Potato Bites are little mouthfuls of yumminess, fancy enough for your holiday dinner yet an easy fix to pair with fast weeknight meals.  And, as a party appetizer, these personal-sized poppers vanish before you can set down the platter! Twice Baked Creamy Ranch Broccoli Potato Bites

Something about a soft and tender baked potato that is so comforting, but often with all the other side dishes can be too filling.  Would you believe one of my go-to “carbo loading” meals at a nearby deli (a super-sized spud topped with broccoli cheese soup) inspired these cute little veggie-stuffed mini potatoes?  It’s true, read on to get the recipe!
