I’ve got so much Texas in me, it’s overflowing into my soup! Seriously though, last week, the hubby and me were feeling a little under the weather but well enough to eat a bit of something (I mean, puh-lease).  I tried my hand at an egg drop soup for the first time and it was fantastically easy and tasty – considering I added some of the flavors we love right here in the Lone Star and topped it with chopped avocado! Ranch Spaghetti and Meatball Frittata

Today, I’ve got a Ranch Spaghetti & Meatballs Frittata to share you heard me right! Simple, speedy and able to cure dinner distress in about 30 minutes. It gives leftover plain pasta new life! Now, don’t make the mistake of calling this egg recipe a “quiche” and scare your hungry men off – it doesn’t have a crust.Ranch Spaghetti & Meatball Frittata close up

Who needs a crust anyway, it’s just a bunch of fattening pie dough! Instead pasta (and please feel free to use gluten-free) holds this skillet of goodness together well enough that it’s easily sliced into wedges that keep their shape.

Today (January 31st) is National Hot Chocolate Day. I love me a hot beverage any time of day during colder weather, but tea, coffee and even a classic mug of cocoa can keep me up at night thanks to caffeine.
