Sunday Shoutout: Four Things for Better Runs and Workouts

Happy Sunday and Father’s Day! I celebrated yesterday with my husband (who is an awesome dad to our three teen boys) by heading up to Dallas to run a Spartan Race at Jerry’s World, aka the AT&T Stadium, Home of the Dallas Cowboys.

Since he loves to travel the world and experience new flavors in food just as much as me, I’m thinking grilling steaks with one of my globally inspired wet rubs!

 

 

Today, I want share with you some of the healthy foods and fitness gear I’ve tried out lately that have passed my persnickity test of approval!

Not much could be sweeter about summer, except maybe a top-crop snack of strawberries. Strawberries balanced with a bit of protein are the perfect healthy snack to fuel the body for one warm-weather activity to the next.

On their own, strawberries are quite the super food, providing a quality source of simple carbohydrates that the body can turn into quick energy for runs, workouts and even power-thinking! The high fiber and water content found in this fruit creates a feeling of welcomed fullness, while keeping the calorie count low – a single medium strawberry only has 4 calories! Plus, a powerful wallop of vitamin C is packed in strawberries, an antioxidant that can help keep muscles, skin and tissues in tip-top shape – just eight strawberries match the vitamin C in a medium orange.

Hazelnut Pecan Protein Fudge Balls

Ingredients
  • 1/2 cup Hazelnut Chocolate Spread (Signature Select)
  • 1/2 cup Clover Honey (Signature Kitchens)
  • 1/2 cup Chopped Pecans (Signature Kitchens)
  • 2 tablespoons mini chocolate chips
  • 1 cup chocolate flavored protein powder of choice typically 3 scoops
Instructions
  1. In medium bowl, mix together hazelnut chocolate spread and honey.
  2. Stir in chopped pecans and chocolate chips.
  3. Stir in protein powder until beginning to ball up. Use hands to knead mixture until smooth.
  4. Divide “dough” into 18 equal parts – about 1 tablespoon each. Roll between hands to form into ball.
  5. Eat! Store leftovers in refrigerator to maintain firmness.

  • ½ teaspoon each: salt, cumin, chili powder

Prepare black bean burgers according to preferred method on package. In medium skillet, add olive oil and bring to medium heat. Sauté squash, mushrooms and tomatoes for approximately 2 minutes, or until softened, but not mushy. Season with salt, cumin and chili powder. Divide veggies among two bowls and top each with a patty. Serves 2.

  • 1 Chipotle Black Bean Burger Patty
  • ¼ cup packaged white bean hummus
  • 1 teaspoon olive oil
  • 1 cup packed fresh baby spinach
  • Garnish: pine nut relish from top of hummus or chopped nuts of choice

Prepare black bean burger according to preferred method on package. In small skillet, heat olive oil and sauté garlic and spinach for 1 to 2 minutes or until wilted. Top patty with hummus and spinach. Add garnish. Serves 1.

  • 1 Chipotle Black Bean Burger Patty
  • 2 tablespoons frozen corn, thawed
  • 2 tablespoons salsa
  • 2 tablespoons chopped tomato
  • ¼ cup crushed tortilla chips
  • 1 ounce cheddar cheese
  • Garnish with sour cream or Greek yogurt, if desired

Prepare black bean burger according to preferred method on package. Break cooked patty into small pieces. In small baking dish or large ramekin, toss together cooked burger pieces, corn, salsa and tomato until combined. Stir in crushed tortilla chips. Top with cheddar cheese and broil for 2 to 3 minute or until warmed through and cheese bubbling on top. Serves 1.
