Beaches, Bikinis & Coconut Bacon Burgers w/ Grilled Pineapple

In my perfect world, I’m living on a remote tropical island with every creature comfort including Wi-Fi, a fully-loaded gym and well-stocked market to easily procure ingredients for all my recipe creations — like this wave-making Coconut Bacon Burger with Grilled Pineapple.

Coconut Bacon Burger with Grilled Pineapple Let me just hit the highlights here so I can get back to my dream — gorgeous prime ground chuck, the signature flavor and scent of coconut, pineapple carmalized  to maximize deliciousness, soft sweet onion buns  — oh and bacon,  from a slab of thick hardwood smoked pig.  Coconut Bacon Burgers with Grilled Pineapple

jennifer fisher yoga beachSo, do I have your attention?! I know what you’re thinking, I can’t inhale a burger and then hit the beach in bathing suit. Oh, yes you can! First of all, let me tell you one thing, eating burgers in bikini — it’s so freeing, soon you’ll loose all your inhibitions. Second, it can get hot grilling on the beach, so you’d be wearing a bathing suit anyway! And third, really-actually-trust-me, a burger is NOT a bad food choice — indeed, it’s quite balanced. Here’s why:

hamburger patty hack

Quick Tip: Use a peanut butter jar lid to shape your patties!

If you start with a quarter-pound of ground beef, you’ll end up with a 3-ounce cooked patty which offers about 25g protein for just 213 calories for an 80/20 grind (of course your bun and topping selections add more). But this 25g is the optimal amount of protein to eat at one meal to keep you satisfied and binge snacking on carby snacks later. ** Note, I realize my recipe is for a larger burger than just described, but hey, i’m still on this mental vacation where anything goes. Feel free to scale your patty down.

Coconut Bacon Burger with Grilled Pineapple Recipe

  • ½ pound thick-sliced hardwood smoked bacon
  • 1 1/2 lbs. ground beef (preferably 80/20 grind)
  • 2/3 cup unsweetened shredded coconut (divided)
  • Salt and pepper
  • 4 slices cored pineapple, preferably fresh
  • 4 sweet Hawaiian or onion rolls, split
  • ¼ cup store-bought Coconut Butter (sometimes called “Coconut Manna”)
  • 1 teaspoon minced basil
  • ½ teaspoon dried red pepper flakes
  • Lettuce
  1. Cook bacon to desired level of crispness in large skillet over medium-high heat. Transfer to paper towels to drain excess grease.

  2. Form beef into 4 equal-sized 6-oz. patties. Use finger to make slight indention in the center of each patty to prevent puffing up on the grill. Season with salt and pepper.

  3. Spread all but 1 tablespoon of the unsweetened coconut in shallow dish. Roll sides of burger patty through coconut, patting on if necessary.

  4. Head grill to 400F degrees and grill burgers and pineapple rings for approximately 4 minutes before flipping and cooking an additional 4 to 6 minutes. Burgers will be ready to take off grill when internal temperature measures 155 F degrees. Transfer burgers and pineapple to platter to rest for 5 minutes.

  5. Meanwhile use a spatula to mix together coconut butter, remaining 1 tablespoon shredded coconut, red pepper flakes and basil together in small bowl. Set aside.

  6. Toast split buns, cut side down, on grill for 2 to 3 minutes.

  7. To serve, spread toasted bun with coconut spread and add lettuce, patty, pineapple and bacon.

Sunday Shoutout: Four Things for Better Runs and Workouts

Happy Sunday and Father’s Day! I celebrated yesterday with my husband (who is an awesome dad to our three teen boys) by heading up to Dallas to run a Spartan Race at Jerry’s World, aka the AT&T Stadium, Home of the Dallas Cowboys.

Strip Steaks with Globally Inspired Wet RubsMaking a special dinner for my own top pop tonight,  a super guy who’s been an amazing father to me for the past nearly 49 years! Since he loves to travel the world and experience new flavors in food just as much as me, I’m thinking grilling steaks with one of my globally inspired wet rubs!

Today, I want share with you some of the healthy foods and fitness gear I’ve tried out lately that have passed my persnickity test of approval!

1) Tommie Copper Compression: First up, some new products from Tommie Copper, a line of active and recovery compression wear that I’ve been wearing for a couple years now.  Tommie Copper clothing encourages muscle and joint recovery through compression after a hard workout – they also have performance apparel that is perfect for wearing during running and workouts.

Tommie Copper Compression Camisole

The unique hook of Tommie Cooper is that their compression and active fit (not so tight) lines of performance apparel are fashioned from fabric infused with high density activated copper. Not only does the proprietary copper fabric serve as an anti-bacterial agent, it also releases ions which may help reduce harmful oxidants in the body.

I love LOVE the Women’s Compression Camisole with Adjustable Straps for so many reasons – the vibrant color (other colors available), the hugging fit, and option to make the straps longer or shorter (for some reason, I always need to make mine shorter).

Tommie Copper Shaping CapriI also tried out a pair of Women’s Shaping Compression Capris designed to provide comfortable compression with a flattering fit. In other words, you butt will look as good as it feels! A curved back yoke lifts and shapes to enhance curves with the contoured waistband holds the tummy in without making a muffin top or feeling squeezed.

Actually, today only you can take 25% off your order at TommieCopper.com with the code FATHERSDAY at checkout.

2) The Pickle Juice Company: Also, I want to shout out The Pickle Juice ® Company, y’all saved my husband (aka “the sweater”) yesterday at the Spartan Race.  He gets muscle cramps, even in shorter distances of running, so I knew that the 4 miles (of basically all stair running) was going to set him up for some debilitating cramps, especially since was super hot in Dallas yesterday.

Pickle Juice Shot from The Pickle Juice Company

So, I made him drink a specifically formulated the Extra Strength Pickle Juice Shot before he started – and guess what, no muscle cramps were reported. This interesting product is based on the functional properties of pickle brine that have been shown to help relieve muscle cramps while also serving as a hydration aid. Each Extra Strength Pickle Juice Shot contains 10 times more electrolytes than your average sports drink and has been proven to relieve muscle cramps in 85 seconds. We are both going to be carrying a little bottle along on an upcoming summer trail race!

This product is available at many sports and grocery retailers, or you can get a “dill” at Amazon  — you gotta getcha some Extra Strength Pickle Juice Shots!

3) Simply Snackin: I appreciate how Simply Snackin makes it easy for me to play hard and snack often (in my preferred higher protein way) with their insanely yummy line of meat-based snacks. Think “jerky” but waaaaay better than the stuff I grew up with as a kid. I’ve enjoyed Simply Snackin’ bars for quite some time now, and they never fail to impress me with their high-quality and amazing array of flavors.

6 Easy Strawberry + Protein Snack Recipes

Easy Protein and Strawberry Snack Ideasjennifer spartan training up and over cg arenaSchool’s out, sun’s out and guns are out and the skies the limit on all the fun and fit stuff that’s coming up in the next few months!

Not much could be sweeter about summer, except maybe a top-crop snack of strawberries. Strawberries balanced with a bit of protein are the perfect healthy snack to fuel the body for one warm-weather activity to the next.

On their own, strawberries are quite the super food, providing a quality source of simple carbohydrates that the body can turn into quick energy for runs, workouts and even power-thinking! The high fiber and water content found in this fruit creates a feeling of welcomed fullness, while keeping the calorie count low – a single medium strawberry only has 4 calories! Plus, a powerful wallop of vitamin C is packed in strawberries, an antioxidant that can help keep muscles, skin and tissues in tip-top shape – just eight strawberries match the vitamin C in a medium orange.

But often, especially for athletes and those with an active lifestyle, merely munching on a handful of berries alone won’t suffice. Pair up strawberries up with a lean protein source for added nutrients and a few extra calories to feel fuller and more fueled for the most vigorous daily routine. Also, eating a snack of carbohydrates with protein (in a 4:1 to 3:1 ratio) 30 minutes after an intense exercise session will help tired and sore muscles recover more quickly.

Check out these Six Strawberry Protein Snacks that can be made in a snap and will fuel you up for running, workouts, climbing and reaching for the sky!

Hazelnut Pecan Protein Fudge

Sponsored post: Check out the new Signature family of brands from Randalls and Albertsons, with more than 4,000 Signature products available and a 100% money-back guarantee.

Today I’m sharing my recipe for Hazelnut Pecan Protein Fudge Balls, a healthier dessert option for those days when the sweet tooth is acting up (pretty much all the time with me). This no-cook protein-powder recipe is quick and easy and fits into my healthy, busy lifestyle so nicely – my family and I enjoy it as a more balanced option to candy – it has no added refined sugars, only honey. Hazelnut Pecan Protein Fudge Balls make a healthier dessert option and are great for workout fuel and recovery.

With an approximate 3:1 carb-to-protein ratio, these energy protein balls also make a nice little workout recovery snack or race fuel to eat on the course.

Hazelnut Pecan Protein FudgeIt’s been my experience that the success of a no-bake recipe can only be as good as the quality of the ingredients that found within. I was a national name brand devotee in the past, but have found that many of the store-label products are just as good (if not better) than the items I grew up with. Randalls and Albertsons grocery stores are making it easy to tackle my shopping list and keep whipping up healthy recipes with their new, exclusive line of Signature products. From coffee to juice, soup to cereal, fresh fruits and veggies to fried chicken and other yummy pre-prepped foods, there are more than 4,000 different products available that help make my life tastier, easier and all-around neater (that’s because they also stock all my must-have home staples like paper towels and cleaning products)!   Oh, and I’m saving money, too! Whoohoo! Hazelnut Pecan Protein Fudge Balls = with Randalls Signature Select

I used Signature Kitchens Chopped Pecans, Signature Kitchens Clover Honey and Signature Select Hazelnut Chocolate Spread from Randalls in this yummy, easy protein snack recipe.

Randall Signature Select CoffeeSeriously, I can’t express my love for Randalls enough, and not just for the Signature line. When they opened a location at the front of my neighborhood a few years ago, I literally cried from sheer joy– I’m not kidding! Prior to this, “a quick trip to the store to grab a few things” was a 1 to 2 hour time commitment depending on the time of day.  I would have to drive about 10 miles one-way to make an emergency coffee restock for the morning or to pick up ingredients that were left off my list. Because of this, we often did without! Imagine the horrors and distress this created for me, an unorganized food blogger!

Randalls supporting my neighborhood fun run!

The staff at my neighborhood Randalls rock! The cashiers and managers know me personally, always take the time to smile and say hi, and answer my questions if I can’t find a particular product I need for a recipe. If I ever have a problem with a purchase (a rarity), it’s always resolved immediately — Randalls stands behind their 100% money-back guarantee on the Signature line of products. Management at this nearby location supported my oldest son’s Eagle Scout Project with a huge donation of bottled water and bakery cookies and promote health, fitness and an active lifestyle as sponsors of an annual fun run in the neighborhood. I am always the first one over to their tent to pick up water and goodies!

Chocolate Speckled and Seeded Protein Cookie (Single Serve) + Toaster Oven Giveaway

This post and giveaway sponsored by Hamilton Beach, but all opinions and enthusiasm are my own!

I never thought I needed a toaster oven and, boy, was I soooo wrong. I changed my mind when recently developed a recipe for Hamilton Beach that would work in their fancy 4 Slice Easy Reach™ Toaster Oven with Roll-Top Door. Honestly, it was my first time using a countertop toaster since back in my childhood days when this is how I made my buttery, cinnamon toast for breakfast! I love the convenience and quick clean up so much, I’m giving away one of these amazing appliances to one of you (enter at bottom of post).

Single Serve Chocolate Speckled and Seeded Breakfast Cookie for Toaster Oven can be made in a conventional or toaster oven! It's also gluten-free and nut-free, plus sugar-free and dairy free without the chocolate chips. 268 calories and 16g protein for this jumbo, giant cookie!

Chocolate Speckled and Seeded Breakfast CookieThe recipe I made for Hamilton Beach was a single serve breakfast cookie Chocolate Speckled and Seeded Breakfast Cookie, a much healthier option than the sugar and butter on white bread treat I would cook up as a kid. Fresh baked from the toaster oven, this cookie is packed with flavor and nutrition thanks to whole grains, seeds, and just a smattering of chocolate to soothe a sweet tooth. The entire huge cookie has just 268 calories and 16g protein – plus it’s gluten-free and nut-free plus sugar free and dairy-free (if you don’t use the chocolate chips). So, what’s so awesome about a toaster oven?  Well, for one thing, it doesn’t heat the whole house up, and that’s a major concern here in Texas! But you still get that fresh-baked, crispy texture on foods that the microwave just can’t deliver – the little slide out tray will accommodate so many healthy food options – broil salmon, roast asparagus, bake eggs, make muffins and, yes, even make toast! It fits four slices of toast or even a 9” pizza! A smaller appliance is also so convenient when just preparing a meal for one or two people and works well in a dorm room, RV, cabin, office kitchen or other places where space is tight. Plus, the 4 Slice Easy Reach™ Toaster Oven with Roll-Top Door has several unique features including a removable roll-top door than makes it super easy to clean up!
